It’s the ‘all things pumpkin’ time of year so of course I had to start dabbling in the kitchen for good Paleo Pumpkin Muffins and was so happy when these muffins turned out so yummy. But then when I decided to top them off with a frosting, it took these muffins to another level. These Paleo Pumpkin Muffins w/Pumpkin Spiced Frosting aren’t lasting long in this house. I’ve made them a few times since nailing the recipe and I promise you, they will be a hit in your household by all who love ‘all things pumpkin’!
My 3 year old granddaughter has woken up every single day this week and asked for these Paleo Pumpkin Muffins w/Pumpkin Spiced Frosting. She wanted them for breakfast AND for dessert in the evening….(and no, she didn’t get them 2x a day) so it’s safe to say that they are kid approved. She even liked these muffins before I created the frosting!
I’m not gonna lie – I do love when pumpkin season comes around but honestly, I don’t crave this flavor all year long. It’s definitely a season for me. I do think that I will keep these muffins around a lot longer than the ‘season’ though …..they are the perfect amount of flavor without being overwhelming and yet, the hint of flavor that you really do get, gives you the warm feelings of fall foods!
I do have a few other pumpkin recipes that are both sweet and savory. I love my Instant Pot Pumpkin Chili this time of year. It’s easy and perfect for the upcoming chilly weather. There’s also my Spaghetti Squash w/Pumpkin Meat Sauce that is a ‘feel good fall food’. But – my Pumpkin Sweet Treats are always great to have on hand for holiday get togethers. There are often so many desserts on the Thanksgiving table, that I like to bring in a few paleo approved treats to not only share with the family but keep me feeling good for the rest of the night and into the next day! I don’t need to go into Black Friday shopping with a crash from the sugar rush from the night before, right??!
While these are all perfect fall foods and great for this time of year, I truly do believe these Paleo Pumpkin Muffins w/Pumpkin Spiced Frosting will be a keeper throughout the year. I love them with a cup of coffee but you can eat them like my sweet lil’ granddaughter and grab a cup of “sparkle water” as she calls it (club soda) …..and lick all the frosting off first, then dive into the muffin after! Isn’t that the way we all eat muffins or cupcakes? Frosting first?? Either way, you must try this recipe! And then make sure to come back and tell me what ya’ll think!
- 1 1/2 cups blanched almond flour
- 1 cup coconut sugar
- 3 tsp pumpkin pie spice
- 1 tsp baking soda
- Pinch of salt
- 1 can pure pumpkin purée (not pie filling)
- 1/2 cup coconut oil, melted/cooled
- 2 eggs
- 1/2 cup palm/coconut shortening (Nutiva)
- 1/4 cup pure maple syrup
- 1 tsp pumpkin pie spice
- 1 tsp pure vanilla extract
- 1 tbsp tapioca powder
- Preheat oven to 350 degrees.
- Mix first 5 ingredients together in a large bowl.
- In another bowl, whisk the eggs, pumpkin purée and oil together. Add to dry ingredients and incorporate.
- Line muffin tin with 12 parchment muffin liners. Scoop out batter with a large scooper into each liner.
- Bake at 350 degrees for 45 minutes.
- Whip all ingredients up with handheld mixer. Should be creamy and smooth.
- Top off muffins with knife or back of spoon. Or use a pastry bag and swirl it all on top! (Put in fridge for 5 minutes of too soft to spread or pipe).
