What do you do when you have leftover sweet potatoes but don’t want to eat them ‘as is’? There are many ways to repurpose a sweet potato but I found this way to be the best so far! This recipe for Paleo Sweet Potato & Bacon Fritters should be kept on hand for those days when you have a couple of potatoes left over ….or perhaps you can just make some sweet potatoes and make this recipe from the start!
You may have noticed that I didn’t post a recipe or any blog post at all last week. Why, you ask? I needed a break. I’m not that blogger that posts every day or even 3x per week but it does take a lot of time to get things organized for a recipe post. It’s become 2nd nature and I definitely wanted to get these Paleo Sweet Potato & Bacon Fritters out for you BUT sometimes you just have to listen to your body and relax when it says to relax. I was busy with quite a bunch of other things and the stress of trying to get the blog post done was weighing on me — so I asked myself “What the heck will happen if I don’t get this recipe out?’ and my inner voice said, ‘Nothing.’ So I went with it.
Along with a little burn out, I had some very nasty messages over on IG regarding one of my ‘stories’ using a Beautycounter product. These 2 messages pretty much broke me (at the moment) and I decided to take a wee break from IG stories as well. I am actually composing a blog post dedicated to these very comments and why people think they can say hurtful things behind a screen. I truly believe that these 2 people wouldn’t have made the comments to my face but for some reason, with social media and the safety of a screen, harsh words are spewed without a care or concern as to how the recipient will receive them. I will leave that there for now but within the week, I will be a sharing a blog post on this very subject.
But back to the Paleo Sweet Potato & Bacon Fritters! As I said, I used leftover sweet potatoes but feel free to make some up right then and there and whip up these fritters. I realize they don’t look orange and that’s because I used the white sweet potatoes. I believe the orange are considered more as yams??? Or is it the other way around? I could look it up but quite frankly, it’s neither here nor there because I believe the taste is so similar that you could use either.
While I’m sharing a way to use up leftover sweet potatoes, I may as well remind you of this Bacon, Apple & Sweet Potato Hash! It’s equally as simple as these fritters and you can rest assured you will be eating up those leftover sweet potato fries – that is, if you ever have any fries left!
We only ate a few of the Paleo Sweet Potato & Bacon Fritters, so I had fritters as leftovers and they kept in the fridge with no problem for the week. I just warmed in microwave with one use and the other was actually in the cast iron pan with eggs beside it. My point? Make these up on a prep day and you’ve got yourself covered!
They are kid approved too and make a great snack! They are a delicious side but I handed one to my granddaughter when she was looking for a snack and she devoured it. However you decide to eat them, you’ll be happy you did because they are deeeelicious! Enjoy!
- 2 precooked sweet potatoes
- 2 eggs
- 6 slices cooked bacon, diced/crumbled
- 2 tbsp finely chopped green onions
- 1/2 tsp garlic powder
- Pinch of salt & pepper
- Cook bacon up in pan and reserve grease. Dice/crumble bacon when drained cooled a bit.
- In a large bowl, smash potatoes and add eggs to incorporate. Mix in bacon, green onions and seasonings.
- Warm bacon grease up again (should be a thin layer of grease in pan). Take a large scooper or ice cream scooper & place a “ball” into pan - I could do 5 at a time in my pan - then gently smash a bit with fork to create a party.
- Cook about 3-4 on medium flame, then turn and cook another 3 minutes-ish.
- Place on paper towels when done to drain. And repeat with remaining “batter”. I was able to get 10-12 patties.
- Serve alone or on the side of eggs. Top with more green onions, sour cream or guacamole!
