The chill in the air is definitely helping me to appreciate soup more than ever! I never really realized – soup is extremely easy to whip up. I mean, seriously ….you want a good, hearty meal? Just toss a bunch of stuff in a pot with broth and let it go! And to take it a step “easier”, toss it in a crockpot!
Dump and Go!
For me, tossing things into a crockpot isn’t because it tastes better. I mean, frankly, if I’m being honest – it would probably taste a tad better in a stove top pot. I make things in a crockpot out of pure necessity! I want and need the ease from time to time. Whether I cook it on the weekend or during the weekday, it’s purely out of wanting dinner ready when I walk in the door. This Crockpot Taco Soup has been waiting for me a few times and the house smells amazing when I walk in!
I realize a lot of people prefer the Instant Pot and I do like my Instant Pot a lot! I just happen to find the crockpot a little more convenient. With Instant Pot recipes, I can’t always use the “cook while I work” convenience. So my Instant Pot is a completely different form of convenience. I love both ‘pots’ but if I had to choose, it would be a crockpot, hands down!
Once again, a recipe coming to you because I wanted to dump and go. I was craving taco flavors but knew I was going to be out all day ….so I figured, I’ll just dump it all in a crockpot and wish for the best! It didn’t disappoint. What makes this Crockpot Taco Soup recipe even better IMO, is that I have made it a few times & froze part of the soup. I have been able to defrost in the morning and have a quick and easy hot bowl of soup at night! So if you find that you didn’t go through the soup as quickly as you wanted to – just toss the rest in a freezer bag or container and you’re good to go!

While I haven’t tried this Crockpot Taco Soup in an Instant Pot, I’m sure it can be done. I am certain that all you ‘Instant Pot Pro’s’ will know exactly what to do – so please give me the deets if you choose to change the pots on me. I won’t be mad about it. I venture to say, there will be a lot of followers who would appreciate hearing your input!
Crockpot Taco Soup
Ingredients
- 2 lbs ground beef
- 1 tub Kite Hill Cream “Cheese”
- 2 10oz cans petite diced Roma tomatoes w/green chili’s (I use Sprouts brand)
- 16 oz chicken stock or broth
- 2 handfuls of cabbage slaw
- 1/2 cup diced onions
- 2 garlic cloves, minced
- 3 tbsp taco seasoning
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Toss all ingredients, except cabbage slaw, into the crockpot!
- Turn on high for 4 hours …or low on 8 hours.
- When done, add the coleslaw and mix in.
- Enjoy with cilantro & green onions sprinkled on top, as well as sliced avocado!
