It’s November and you’d think I’d be sharing more of a fall food recipe or at least something that would go along side a turkey, right? Wrong. I’ll get there – I’m sure but I concocted this Paleo Chow Mein {soy-free, gluten-free, vegetarian} on whim and it was so good! I just had to get it up on the blog for you all.
I take the easy way out these days. I’m not trying to win any “all from scratch” awards when it comes to making meals for me and my family. I realize it might be more cost effective to shred your own head of cabbage – and trust me, I’ve done that for years but with the life that I want to live, I choose to make it a little easier on myself these days with time saving options! This Paleo Chow Mein {soy-free, gluten-free, vegetarian} recipe is no exception. I use a prepackaged bag of broccoli slaw and it helps with the ease of the meal, by tossing it in the pan straight from the bag.
Spaghetti squash. How often do you use it and what do you use it for? This recipe came to mind when I had a spaghetti squash to use and didn’t want to just pour marinara sauce over top – once again. Having prepped spaghetti squash on hand is a good idea as it is hot to handle when it is freshly cooked. I like prepping a spaghetti squash on Sunday prep day and when I need it for a quick meal during the week, it’s easy to handle and it’s also perfect for a quick ‘toss and warm’. And that’s pretty much how this recipe came to fruition …..just tossed it in a pan with the broccoli slaw and added seasonings. Done and good!
While this Paleo Chow Mein {soy-free, gluten-free, vegetarian} isn’t what you would think of this time of year, I do have a Spaghetti Squash with Pumpkin Meat Sauce that you might like. I still use the same prep ahead with the spaghetti squash and the meat sauce with pumpkin can also be prepped ahead or made the night of. The addition of pumpkin makes it more “fall friendly” and has the added nutrition of pumpkin benefits!

I’m pretty baffled that it’s already November and with my daughter and grand baby living with us, I haven’t had much time to get all of the holiday recipes together that I had in mind to do! When you’re feeling like a quick and tasty meal is a must, this Paleo Chow Mein {soy-free, gluten-free, vegetarian} is what you need! Be sure to save this on Pinterest for safe keeping. The recipe is vegetarian but tossing in cooked chicken or shrimp…..or serving it on the side of any protein is deeelish. Have fun with it and make it your own!
- 1 medium spaghetti squash/cooked*
- 4 cups broccoli slaw
- 1/4 cup coconut aminos
- 2 tsp fresh grated ginger
- 4 garlic cloves, minced
- 1 tsp salt
- 1 tsp garlic powder
- 1/4 tsp pepper
- 2 tbsp coconut oil
- In a large pan, melt coconut oil. Add the broccoli slaw to pan and toss to coat.
- Turn flame to low and add in spaghetti squash, coconut aminos, ginger, garlic, and seasonings. Stir to combine.
- Once all is combine and cabbage slaw is wilted, it is done!
- Add to the side of your favorite protein or toss in some shredded chicken.
- *Cooking Spaghetti Squash
- *Cut squash in half and seed.
- Roast: preheat oven to 425 degrees - wipe the flesh of squash with olive oil, place squash flesh side down on baking sheet and roast for 45 minutes.
- Microwave: place squash skin side down, on plate with a few tablespoons of water - microwave on high for 10 minutes.
- Each method will require you to check the tenderness of the strands of squash when done, by using a fork and scraping them. Depending on size of squash the times may vary by a few minutes. I like my strands soft but with a little bite and not mushy but we all have our own preferences so adjust accordingly.
