It’s so easy to go out and grab a pre-made roasted chicken at your local grocery store. I do that quite often in fact. But you can also make your own and have veggies right along side to complete the meal. This 1/2 Roasted Chicken & Veggies dish is simple, flavorful and can be made on one pan!
One of my favorite brands, Primal Kitchen Foods, has the best salad dressings and marinades. Since I’m not a huge salad eater, I tend to use the dressings as “sauces”. I encourage you to check out all of their dressings. Dressings aren’t just for salads anymore! I used their Ranch BBQ Dressing for the 1/2 Roasted Chicken & Veggies and it turned out amazing!! The vegetables are nicely flavored, if you choose one pan. The sauce drippings are all the veggies need! And who doesn’t love a meal that is easily seasoned without much effort at all?
Save Time and Dishes
Speaking of one pan meals! If you’re a fan of cooking your whole meal on one pan (like me!), here’s another one for you. Guys, this one is finger lickin’ good! One Pan Chicken Thighs and Veggies will have you coming back for more ….and wishing you had more! I have always gotten ‘thumbs up’ when I serve this dish. It saves beautifully, so it’s a great option for a prep ahead meal!
I hope to have more and more one pan paleo/keto meals for you. School (work) is quickly approaching so getting back on the prep train is pretty important. I find prepping meals cooked on one pan is not only good but very efficient! I have been so lax in prepping food since I’ve been on summer break. When that schedule becomes tight, I’ll appreciate having spent a little bit of time prepping so there’s food/meals on hand.
I prefer making this 1/2 Roasted Chicken & Veggies recipe on one pan. However, it can be easily made on 2. I promise you that the drippings from the chicken take the veggie flavor up a notch. Your choice! But either way, I highly suggest you get this on your ‘recipes to make’ list!
1/2 Roasted Chicken & Veggies
Notes
*Buy Ranch Direct (grassfed/grassfinished)
*Primal Kitchen Foods Ranch BBQ Dressing
Ingredients
- Chicken:
- 1/2 chicken (I use Buy Ranch Direct*)
- 1 tbsp ghee or avocado oil
- 1/4 tsp salt
- 1/4 tsp garlic powder
- Sprinkle of pepper
- 1/3 cup of Ranch BBQ Dressing (I use Primal Kitchen Foods*)
- Veggies:
- 4-6 cups favorite vegetables
- (I used carrots, broccoli, zucchini, onions & mushrooms – you can find this prepackaged at Von’s or other grocery stores)
- 1 tbsp avocado oil (or favorite cooking oil)
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat oven to 425°
- Brush oil or ghee onto the chicken and season with salt, garlic powder and pepper.
- Place seasoned chicken into prepared oven and cook for 25 minutes.
- Brush on the BBQ Ranch “Sauce” to cover chicken and place pack into the over for 10-15 minutes. Add prepared vegetables to the chicken pan – or put veggies on another pan and stick in oven at this time.
- Brush more sauce on chicken and let it go another 5 minutes in the oven. Likewise, keep the veggies in oven, tossing around a bit.
- Let stand chicken stand 5-10 minutes before diving in – it is hot to manage for cutting apart! Or take your chances and munch on 🙂
