Here I am again with another Keto recipe! Am I paleo, keto or what?? Let’s not put a title on my eating habits and just run with it! I like creating real food recipes, no matter what category they fall in. These 3-Ingredient Keto Chocolate Cups are a treat …..a fat bomb, if you will but still real food as far as I’m concerned.
When you walk around the store and find pre-made treats, you’ll notice that there are many ingredients added. Sometimes I indulge and not sweat the small stuff but more often than not, I’ll make the treat at home. While I consider these 3-Ingredient Keto Chocolate cups a treat, they aren’t made with any crazy ingredients that I usually steer clear of. I’m a chocoholic and I love having a piece or 2 of dark chocolate per day. This “habit” (or chocolate palate) was inherited by my daughter as well. She’s still hanging tight with her keto lifestyle so here I am again, creating a treat so she will never feel deprived of anything while continuing on her path.
To Treat or Not To Treat
I realize a Keto “diet” is supposed to help limit the cravings for sweets. I think that it really helps the person who is coming off a very high carb diet and/or sweet-aholic. Loving dark chocolate (and I mean 90% or higher) doesn’t constitute as a sweet-aholic as far as I’m concerned. People trying to come off the Standard American diet who also love soda’s, gummy bears and pasta’s, can truly benefit from switching over to a keto and/or paleo template. And that’s where I think these 3-Ingredient Keto Chocolate Cups can help a lot! I just don’t feel like it needs to be an all or nothing. Tweaking recipes or creating healthier sweet treat swaps to keep you truckin’ along with a healthy lifestyle is what it’s all about.
This recipe couldn’t be easier! Trust me. You can do this with your eyes closed (but I wouldn’t). I used Lily’s Dark Chocolate Chips to make it easier vs. incorporating a keto approved sweetener. It makes it super easy to prepare as sometimes the sweeteners are hard to keep distributed evenly in a melted mixture. But with the already stevia sweetened chocolate chips, you’re good-to-go with these 3-Ingredient Keto Chocolate Cups! You can find these chocolate chips at select Target stores, Whole Foods, Sprouts, Walmart, Amazon and Thrive Market!
The More The Merrier

No matter what “diet” you’re fueling with, it’s always good to have a sweet treat option that isn’t filled with sugar or unnecessary ingredients. I never want to feel deprived but I don’t want to detour health goals. It’s just not realistic to think that you can live life without an occasional treat! If you’re one of those who doesn’t care for sweets – hats off to you! Dark chocolate is one of those ‘foods’ you can feel good about eating. And these 3-Ingredient Keto Chocolate Cups bring in some antioxidants and healthy fats into your diet. BUT ….they should still be considered a treat (remember that as you smack your hand for going back for 3rds and 4ths!)
Since they are made with coconut oil, they will melt if left out in a warm room. And they definitely start molding into your fingers as you eat them. Not a big deal – just eat and then lick those fingers to get every least “drop”! Finger lickin’ good, definitely applies – – enjoy!
3-Ingredient Keto Chocolate Cups
Ingredients
- 9 oz. package Lilly’s Dark Chocolate Chips
- 1/4 cup coconut oil
- 1/4 cup salted macadamia nuts, chopped
Instructions
- Line a cupcake tin with 10 parchment muffin liners.
- In a microwave safe bowl, melt chocolate chips with coconut oil in 25 second intervals, mixing after each interval. (It took me 3 intervals)
- Once melted & combined, take a tablespoon and scoop chocolate mixture into each liner. Spoon out another tablespoon and add another tablespoon to each cup. (I do it separately to ensure even filling …but you can certainly do 2 tbsp’s at a time, to each liner). If you have any remaining melted chocolate, evenly distribute amongst cups – OR just feel free to lick the bowl! 🙂
- Sprinkle a pinch-full of the chopped macadamia nuts onto each chocolate cup.
- Place in refrigerator for 2 hours. Ready to eat! Keep stored in fridge – they will slowly melt in heat/in hands.
