Let’s talk aioli! Oh man! I love garlic….and add that to some paleo mayo??? I’m in! Now….you can make your own mayo or you can get Primal Kitchen’s paleo mayo on Primal Food Pantry’s site. It’s super easy to make but I do love the convenience of their mayo and I did make this aioli with Primal Kitchen’s Mayo.
Here’s how you make paleo mayo:
-1 cup light flavored olive oil
-1 pastured egg
-1 tbsp apple cider vinegar
-1/2 tsp garlic powder
-1/2 tsp dry mustard
-Salt & Pepper (additional seasonings optional to make flavored mayo – chipotle, spicy, etc.)
Add egg & apple cider vinegar in the immersion blenders measuring cup and blend with immersion stick. Slowly…….very slowly…..drizzle in olive oil while constantly blending with blender. Continue blending after olive oil is completely incorporated, for another couple/few minutes.
Add s&p and dry mustard and fold in with a rubber spatula. You can certainly do this in a food processor but you will need to double/triple the batch so your blades will be able to incorporate all the ingredients.
Now onto the aioli’s! There will be the basic garlic aioli but additional seasonings for chipotle, lemon garlic & bacon! Check out the recipe and serve with artichokes, sweet potato fries, cut up veggies and/or whatever else you like to dip!
