I’m sure many of you out there love a fruit and savory combo but I personally always thought it was weird to add fruit to a savory dish. This Bacon, Apple & Sweet Potato Hash was honestly something I never thought I’d toss together …..and actually like it!
I’m no genius in the kitchen. If you read through my posts, most of my recipes come out of necessity and/or using up leftovers. This Bacon, Apple & Sweet Potato Hash was no exception. I had sweet potato fries left over from the night before so this hash came together for breakfast the next day. Why did I add apple? Because it needed to be used up! Yep. And I thought, “Why the heck not?” It is actually a great combination! Like, super delish – and when you use really good bacon, it takes it up another notch!
This is a great recipe for a Sunday brunch but I also think that this would be a great addition to your Thanksgiving or Christmas dinner. Or perhaps even scramble some eggs right in with the hash and bake it. I am going to try that next – what a great casserole this would make!

How much easier can breakfast be? I need to remember this too, as the school year has started and mornings get a little hectic with trying to rush out the door.
Next time you have leftover sweet potatoes/fries, make sure you give this a try. Heck, you don’t need leftovers to make this Bacon, Apple & Sweet Potato Hash – but it certainly makes it easier to have the sweet potatoes already cooked and on hand. So keep that in mind when making this. It’s all about the ease my friends! Enjoy!
- 5 slices of bacon, cut into pieces, then cooked
- 1 green apple, peeled and diced into small cubes
- 1 1/2 cups cups, cooked & diced sweet potatoes* (I used the leftover sweet potato fries from the night before)**
- 1 handful of chopped kale
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- In a large pan, cook bacon pieces until nearly cooked. Add in diced apples and toss about to coat in bacon grease. Place a lid on pan, letting a little steam to escape and cook for about 5 min, tossing occasionally.
- Add in chopped kale and stir to combine.
- Once kale as cooked down a bit, add in the cooked sweet potato cubes to warm through and toss to incorporate. Season with salt, pepper and garlic powder.
- *My sweet potato fries were seasoned from the night before so adjust seasonings if you aren’t using preseasoned potatoes.
- **Sweet Potato Fries: preheat oven to 420. Slice 2 large sweet potatoes into fry shaped slices. Lay on baking sheet. Toss with 2 tbsp avocado (or favorite cooking fat). Lay out in single layer on pan ....sprinkle with salt, pepper and a pinch of cayenne or favorite spicy seasoning. Bake at 420 degrees for 15 minutes. Toss and bake another 15 minutes.
