I don’t know about you but I have loved the Bacon & Gruyere Egg Bites at SBux for quite some time. I actually found myself grabbing some a couple of times per week, as I went into work last year. For the past 3ish months, I have been trying to recreate a bit of a healthier version and I think I am finally happy with these little bites!
What I love about them – is they are the perfect grab and go meal! If these are already prepped, it’s a quick warm and out the door you go!
One Pan Fits All
If you don’t have an egg poacher pan, I highly suggest you get one. I got a very affordable pan about 5 years ago and use it quite often. It will give you the best poached egg but it will also “hard boil” your eggs so for egg salads or eggamole and you don’t have to worry about peeling them! And while I have tried many times to make these Bacon & Gruyere Egg Bites in my muffin tin, I found that this egg poacher works better for the results I was looking for!
Since the pan only cooks 6 cups at a time, I may grab another so I can prep ahead. That said, they really do come together rather quickly. Waiting on the bacon to cook up is what takes the longest in this recipe.
Healthy Bites!
There’s a few recipes here, that offer the same idea but cooked in a muffin tin, which everyone seems to own. I believe these Bacon & Gruyere Egg Bites will work in a muffin tin too, however I haven’t tried it yet. These ‘Simply Made Paleo Egg Bites‘ are good and made in the oven. They are also made with canadian bacon which is DELISH! And if you like chorizo, I’m sure you’ll love these ‘Chorizo & Egg Bake Bites‘ – these are also paleo!
While I usually steer clear of cheese, I haven’t had any issues using this gruyere, nor did I have issues grabbing the bites at SBux. If you have an intolerance, perhaps try goat cheese or add in a bit of Kite Hill Cream “Cheese” Spread. Actually, that sounds like a great idea! I think I’ll try the “cheese” spread next time 🙂 As for the goat cheese, that’s what I originally tried this recipe out with and we did love it a lot! But the gruyere makes it more reminiscent of the ones I’m fond of!

Bacon & Gruyere Egg Bites
Ingredients
- 6 eggs
- 4 pieces of cooked bacon
- 1/2 cup shredded gruyere cheese
- salt & pepper
Instructions
- Cook bacon and set on paper towel to cool, then dice.
- Whisk 6 eggs in bowl & season with salt & pepper.
- Shred cheese.
- Add water to the egg poacher pan, just below the cups. You don’t want the water touching the cups.
- Evenly distribute the whisked eggs to each of the 6 cups.
- Do the same with the cheese and bacon – distribute evenly.
- Take a spoon and gently push down the cheese and bacon into the eggs. Place lid on pan.
- Turn flame on to med-high and once you start hearing the water start to boil, turn the flame down to med-low.
- Let it go for 6-8 minutes.
- If the center of the egg is jiggly (by a quick touch), keep the lid on and check at 1 min intervals.
- Take egg cups out of the pan to cool, then gently remove the egg bites from the cups!
