Tell me. Are you a banana fan? I used to LOVE bananas! I would eat a banana a day …with almond butter, of course. Slowly got out of the habit and it had been about 2, maybe 3 years since I had eaten one. Making this Banana Chia Pudding was because my little daily habit of bananas, came rushing back to me recently!
Welcoming Bananas Back!
Let’s back up a sec. In early part of April, my sister in law ordered groceries (lockdown/pandemic time ….so she wasn’t leaving the house) and she mistakenly ordered way too many bananas. When she asked if I wanted a bunch, I said, “Sure. Why not?” And that’s when it all happened! I actually ate one on the way home from picking them up from her. OMG! What had I been missing out on for the last few years?
Ok, so I didn’t finish it because I was like, “Wait ….get home and eat it with cashew or almond butter!” That’s exactly what I did and it was so delicious. I haven’t made a trip to the grocery store since then, without grabbing a bunch! Thankfully, Banana Chia Pudding came to mind because there were a couple of bananas getting a little too many brown spots. Bread didn’t sound good at the moment so I just whipped it up with a handheld mixer and added coconut milk. That in it of itself was really good ….but then chia seeds popped into my mind. And there ya have it – Banana Chia Pudding happened.
Don’t Like Bananas? No problem!
If you have made my Vanilla Chia Pudding in the past, you will see that this recipe is ‘just that’, with the added banana. It’s the most simple recipe ….it’s hard to even call it a recipe. My family & I like to keep this on hand because it is a quick and easy breakfast. Add some grain free granola and/or berries and you’ve got a nice little breakfast or even dessert!
Chia seeds are high in antioxidants and they are full of fiber! It just so happens, that I love chia seeds so it’s quite easy for me to incorporate them into a meal. I think anything that will add a nutritional value to a recipe, I am all for trying. If you need to add a bit more fiber into your diet, give chia seeds a try!
You don’t need to love bananas to give this Banana Chia Pudding a-go. Just omit the bananas and you’ve got a Vanilla Chia Pudding 🙂 Simple as that!

Notes
*If you prefer to omit bananas, add in one heaping tablespoon of honey.
Ingredients
- 1 can full fat coconut milk
- 2 small, ripe bananas
- 1/3 cup chia seeds
- 1/2 tbsp pure vanilla extract
Instructions
- In medium bowl, smash bananas with a fork. Add the coconut milk & mix the bananas and coconut milk with a handheld mixer til incorporated.
- Add vanilla extract and chia seeds. Mix with mixer for 30 seconds.
- (If you prefer to have a smoother consistency, place all ingredients in a blender and whip up).
- Pour the Banana Chia blend, into 6 small ramekins/dessert cups. Or you can leave in the bowl and just scoop out as you go.
- Set in fridge for 6 hours or more.
- Serve with favorite berries and/or grain free granola.
