I have been on a huge soup craze! It’s been so chilly and a bowl of soup simply sounded so good. I had ground beef on hand and I just started winging it in the kitchen. This BLT Soup came to fruition!
Make It Your Own
Here’s the thing about savory foods. I don’t feel like a recipe needs to be followed to a ‘T’. Do you? I mean, if you’re reading this, clearly you’re here for food/recipes but whenever I had looked to a recipe for something, I more or less used it as inspiration. Obviously we all have different tastes so if I’m adding 1/2 cup of diced onions and you don’t care for onions, then by all means – skip the onions! I don’t think it’ll make or break the recipe because clearly, if you don’t like onions, the recipe will not taste good to you.
This BLT Soup calls for a Spicy Ketchup but if you don’t like spice, use regular ketchup (and when I say ‘spicy’, it’s just for a punch of spice….there’s actually no heat to this at all). But all that to say – recipes should be a guideline and can be tweaked to suit your own needs. I am never offended if someone subs or adds a little more of something ….I’m all about trying to inspire you to just get in the kitchen.
Baking is a whole other ball game! It’s a science and especially so with paleo baked goods. Not all grain free flours can be subbed 1:1 so it’s trickier when trying to adapt to your own liking. This is where following the recipe is pretty important unless you are familiar with the ingredients that you’re working with. Obviously if you’re making cookies with chocolate chips but you don’t like chocolate chips …..those can easily be left out. You can opt to add in raisins or nuts instead – or just make the cookie without any additions. But all in all, following a baking recipe is definitely more important than a savory one.
Back to the SOUP!
This BLT Soup is made in one pot which makes it soooo nice for clean up! It’s also made relatively quickly – just about 30 minutes and you’ve got a hearty soup ready to go. You can even let it cool and freeze it for prepped meal in the wing!
Speaking of one pot recipes, I created a One Pot Jambalaya when my son sent me a picture of his homemade Jambalaya. My hubby saw the picture and said, “Oh man! I love Jambalaya!” And into the kitchen I went (well, not that day …but within a couple of days!) to whip up a paleo Jambalaya.
I must admit – I’m not usually a huge soup lover. But I think that’s because I like the heartiness of a “bite” when I’m eating. This BLT Soup gives you that feeling! It’s definitely a comforting food and makes you want to go back for more!
BLT Soup
Ingredients
- 2 lbs ground beef
- 6 slices bacon, cooked and diced
- 16 oz beef or chicken broth
- 1 cup Spicy Ketchup (Primal Kitchen)
- 1 can full fat coconut milk
- 3 Roma tomatoes/diced
- 1/2 cup diced onions
- 1 package frozen cauliflower rice
- 2 big handfuls/cabbage slaw
- 2 tsp garlic powder
- 1 tsp salt
- 1/4 tsp pepper
Instructions
- Cook bacon up in a large stockpot. Once cooked, remove and lay on paper towels. Chop into bits.
- Add the ground beef to stock pot and brown, tossing about into crumbles.
- Pour in chicken broth, coconut milk & the spicy ketchup, garlic powder, salt & pepper. Stir to combine. Let come to a boil, then turn down heat/flame to medium.
- Toss in onions, cauliflower rice & cabbage slaw. Stir and let heat through for about 10 minutes.
- You can either top off each serving with the bacon and tomatoes or stir them right into the stockpot!
