Have you ever heard, “If a picture paints a 1000 words…..”? Well, this picture doesn’t quite paint what I’d like it to. I tried so hard to make this picture look better. Other than altering the recipe to get a better photo, I had to just leave it as is. The picture doesn’t do the Buffalo & Everything Chicken Thighs any justice at all. I highly suggest you just try it and see for yourself.
Buffalo Sauce Fans!
We are buffalo sauce fans in this household. Honestly, we will just fill a ramekin of sauce and dip anything and everything while eating a meal. I wanted a crispy chicken one night so covered the thighs in Everything But the Bagel Seasoning and loved the result! BUT last minute, decided to drizzle a little sauce over top. WIN-WIN! My favorite Buffalo Sauce to use is the New Primal but feel free to use your favorite. The New Primal has legit ingredients and is Whole 30 approved! Using that and the Kite Hill Cream “Cheese” spread made the sauce super creamy with a buffalo bite!
The Buffalo & Everything Chicken Thighs go quickly! I tried to prep by doubling the batch but it didn’t last like planned. They are that good! So if you have the same thing in mind, make sure to hide a stash in the back of fridge and bring it up front a few days later.
If you’re like my family and love buffalo ‘anything’, try this Buffalo Shepards Pie! OMG! Talk about addicting! This definitely is something that gets gobbled up pretty quickly.
There are a few other buffalo flavored recipes here so just do a search with ‘buffalo’ and you’ll get a handful that will pop up.
In the meantime, I suggest you go defrost your chicken thighs and give this Buffalo & Everything Chicken Thighs recipe a try! And if you’re not a buffalo sauce fan, omit it and just stick with the Everything Chicken. They are good either way!
Buffalo & Everything Chicken Thighs
Ingredients
- 4 chicken thighs/skin on
- 2 tbsp melted coconut oil(or oil of choice)
- 1/2 cup pork rinds (before crumbled)
- 3 tbsp Everything But the Bagel Seasoning
- 1/2 tbsp garlic powder
- 1/2 tub (8 oz) Kite Hill Cream “Cheese” (or regular cream cheese)
- 1/4 cup cashew milk
- 1/4 cup buffalo sauce
Instructions
- Preheat oven to 420°
- Finely crush the pork rinds using a food chopper or something of that nature. You want the pork rinds to be ‘bread crumb like’.
- Once crushed, add the Everything But the Bagel Seasoning to a small bowl, along with pork crumbs and garlic powder.
- Brush oil onto each chicken thigh. Place chicken thighs in a baking dish.
- Using a tbsp, sprinkle on the pork/seasoning mix onto each chicken thigh.
- Drizzle any remaining oil into the chicken.
- Bake for 35 minutes.
- While in oven, warm the cream “cheese”, buffalo sauce and cashew milk over low heat. Stir to combine.
- Once chicken is out of oven, let it sit 5 – min, then drizzle on the buffalo cream sauce.
- Eat with roasted broccoli, brussel sprouts and/or your favorite veggies!
