2018 is here and it came so quickly! As a child, I really feel like the year dragged on – not that I complained but thinking about how long it took for Christmas to come around or the school year to end, it just seemed like time stood still a long longer than it does now. Adulting really speeds time up, doesn’t it? I’m sure all of you with grown children can attest to the fact that time really does fly by!
I don’t usually make New Years Resolutions per se but I do try and set a few goals and/or remind myself be more mindful of the moments at hand. And that is one of the things that I am going to try and be more mindful of, is being in the moment. I will write more about this in an upcoming blog post but I will say this — as I see how quickly life moves along, I am reminded that life isn’t a destination ….it truly is a journey so though I have a few goals in mind, the goals aren’t where my “happiness” starts OR ends. The journey and how I handle that journey, is equally if not more important than meeting the goal I’ve set. If I’ve learned nothing else over the course of my 52 years of live, is that time doesn’t wait for you to be ready or to for you to be happy. It just moves along, whether you’re ready for it or not. So – my reminder to myself for 2018 is to ‘be in the moment’ and appreciate that moment because it’s just part of the journey!
We all know that so many of us put health (diet in particular) at the top of the list of New Years Resolutions. Whether it be to start an exercise regime or get on track with healthier food choices. Gym memberships are on the rise in January as well as diet programs. I personally (and if you’ve followed me since the beginning, know this) like just eating real food and not trying gimmicky diet protocols or programs. If you’re looking to start a program focusing on real food, I highly suggest ‘Whole30′ or the ’21 Day Sugar Detox’ programs. These programs are usually a norm for many of the folks I follow or am a part of the community with and I think they are a great way to dial in on healthy choices and ridding sugar from the diet as we all know how December catches up to most of us with all of the holiday festivities going on! Okay …so speaking of real food — I’ve got this Butter Roasted Carrots and Golden Beets recipe for you! Sometimes we get tired of the same ol’ but tossing these veggies in some fat and roasting them, gives you an additional veggie to put on the side of your favorite protein OR just munch on them as a snack like my daughter does! It’s quite easy and a perfect prep ahead to have on hand for the week.

- 2 lbs rainbow carrots
- 1/2 lb golden beets
- 1/4 cup ghee, melted (or unsalted butter)
- 3-4 cloves garlic
- 1 tbsp dried rosemary, chopped
- 1/2 tsp salt
- Preheat oven to 425 degrees.
- Slice carrots into about 1/2 inch chunks. I like to slice at an angle.
- Cut golden beets into quarters.
- Add garlic, salt and rosemary to the melted ghee or butter.
- Lay veggies on large baking sheet and drizzle the ghee onto veggies -- lightly toss with hands to get them all smothered with the ghee goodness!
- Roast in 425 degree oven for 25 minutes.
