For all of you who love and can eat cheese – these Caprese Skewers are for you! I don’t even know if I can call this a ‘recipe’ because really, it’s just a few items poked by a skewer!
My daughter loves caprese salad and I was trying to get an appetizer type food together to take along to Concerts at the Park. When it comes to taking things to the park, finger foods are usually my favorite so we don’t have to pack a lot of extra utensils etc. When my daughter mentioned a caprese salad, I decided to make these Caprese Skewers instead. The are absolutely the easiest!
Mazzy (my granddaughter) was LOVING cheese and tomatoes at the time so I thought she was going to be all over these. But as toddlers do, she was suddenly uninterested in tomatoes so ‘fail’ for the Maz! There was more for us though ….so there’s that!
Basil Lovers Unite!
Another combination we love – using basil – around this house is pesto and tomatoes! If you’re a fan of that combo too, you will love these Pesto Chicken Stuffed Tomatoes! They are equally as colorful as the Caprese Skewers so it’s always fun to make these when trying to “dress up” your table. The stuffing is addicting though ….so if you tend to munch as you go, make sure you leave enough to stuff those tomatoes!
Here’s the thing – I made these Caprese Skewers with string cheese. I know, not optimal but I grabbed the organic and decided these would be the quickest and easiest way to make these up ….as well as thinking that my granddaughter would have so much fun with the extra string cheese I’d have on hand. I’m not gonna lie, they were my favorite when I was young. I almost created a game out of peeling the layers as ‘stringy’ as possible. She didn’t have much fun with it – haha. She just chomped on them and got irritated when I tried to “string it” for her.
You can drizzle the oil and vinegar all over the Caprese Skewers or just dip and go as you please. We decided to go with the single serve/dip as you go, if you will as we weren’t sure how the leftover skewers would keep with oil and vinegar all of them. They are definitely a crowd pleaser and a colorful addition to add to any table!
- 1 container grape tomatoes
- 1 9oz package of organic string cheese
- 40 - 50 basil leaves
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt and pepper
- 12 skewers
- Slice string cheese sticks to make about 24 "cubes".
- On each skewer, poke through one grape tomato, a folded basil leaf, piece of cheese, basil leaf, tomato, basil leaf and one last tomato.
- Repeat with each skewer.
- In a small bowl, whisk the oil and vinegar ...adding a sprinkle of salt and pepper. Spoon oil and vinegar over entire batch of skewers or on each individual skewer as you eat them.
