How convenient are the packages of cauliflower ‘rices’ or ‘crumbles’? This Cheesy Cauliflower Crumble w/Mushrooms comes together so quickly because of the convenience of riced or crumbled cauliflower.
With being back to work (and might I add, I’m not digging it one bit!), I’m ready to prepare sides ahead of time and keep them on hand to throw next to a piece of protein that is either already prepped or something that can be quickly cooked up. I personally feel like having a few side dishes ready to go, makes it so easy to complete a meal in minutes. That said, this recipe doesn’t take long to whip up so it’s definitely a good one to make ‘on the night of’ as well.
While the recipe title, Cheesy Cauliflower Crumble w/Mushrooms says “cheesy”, it’s dairy free! There’s no cheese in this recipe but trust me, it tastes like there is. As we devoured this up one night, my girls kept saying, “It’s so cheesy” ….which made momma happy!
Picking My Battles
As mentioned, I use the prepackaged cauliflower crumbles. I did used to spend the time, ricing cauliflower in my food processor but I choose to take the “easy way out” and buy prepackaged. I feel like the ease is worth the little bit of extra cost because my time is worth it! Ricing your own isn’t hard – I know that but it does take a little time and then there’s the clean up. For me, I’m all for letting someone else do that part of the job and I’ll just toss it in the pan!
I do have this Chimichurri Shrimp & Cauliflower Rice that uses prepackaged crumbles as well. This recipe doesn’t taste like it comes together in minutes but it truly does! If you like shrimp and a little kick, you’ll love this recipe! And while it’s an amazingly good meal, so is this Cheesy Cauliflower Crumble w/Mushrooms and it could easily be a meal with the addition of shrimp too!
Make it a Meal
I served this Cheesy Cauliflower Crumble w/Mushrooms on the side but much like the recipe I just mentioned, you could add any protein right into the dish. Aside from the shrimp, add some shredded chicken, diced steak or even some crumbled sausage or ground beef! Hmmmm….I think that is exactly what I’ll do next time — and there ya go! It’ll make it that much more convenient if prepped ahead and served on a busy week night!

- 1 package cauliflower crumbles
- 1 cup diced mushrooms
- 2 tbsp butter or ghee
- 1 cup cashew milk
- 1 tbsp tapioca flour
- 2 tbsp nutritional yeast
- 1/2 tsp salt
- 1/4 tsp pepper
- Warm 1 tbsp butter or ghee in large pan. Toss in diced mushrooms and warm through for 3ish minutes.
- Add additional tbsp of butter or ghee as well as bag of cauliflower crumbles - stir to incorporate.
- Let it go for about 5 minutes and add cashew milk, nutritional yeast, salt and pepper. Slowly sprinkle in tapioca flour, stirring to eliminate any lumps forming.
- Turn flame off, give it a stir again and let it sit for a few minutes to thicken up.
- Serve on the side of your favorite protein!
