I’m sitting here procrastinating on writing up this recipe post because I can hear the rain outside and it sounds l o v e l y ! Sadly, So Cal doesn’t get the rain like we should so when I hear it, I treasure it and the plinky/plunks of me typing this post is taking over the pitter-patter that I want to hear. BUT – the show must go on and I must get this Chia Latte Pudding {Simple – Paleo – Keto} up now, before the day/weekend gets away from me!
I made this super easy Chia Latte Pudding at the end of the summer and here it is December and I’m finally getting it up on the blog. I completely forgot about it with the rush of school/work starting back up and then of course, all things pumpkin jumps right in to play! So, here ya go. Better late than never.
What reminded me of this Chia Latte Pudding {Simple – Paleo – Keto} was the fact that I was eating my Vanilla Chia Pudding (pictured below) for breakfast and I thought to myself, ‘Hmmmm, a coffee flavored chia pudding would be really good….’ and it suddenly occurred to me that I did in fact have that thought before and I actually created a recipe a handful of months back to curb that craving and thought. What’s more, is that it has collagen added to it so it’s taking the level of nutrition up a notch! I used Primal Kitchen Foods Vanilla Collagen Fuel so there’s no need for added sweetener in this recipe – however, if you don’t not have this particular collagen, you may want to add a teaspoon or two of honey or pure maple syrup. Those additions would negate this recipe being Keto approved though.
Although I forgot about this recipe – I do remember eating it both cold and warm when I did whip up a couple of batches and both were delicious. I think for these cooler months, the warmth is nice and is very reminiscent of eating a coffee flavored Cream of Wheat (does anyone remember Cream of Wheat?!) Either way, if you like coffee and chia pudding, you will love this Chia Latte Pudding {Simple – Paleo – Keto} because it’s not only good but it’s good for you!
Have at it my friends!
- 1 cup coconut milk (full fat can, shaken)
- 1/2 cup cold coffee or cold brew
- 1/4 cup + 1/8 cup chia seeds
- 1 scoop Primal Kitchen Foods Vanilla Collagen Fuel
- Shake all in air tight container....or in bowl using whisk.
- Chill in fridge for at least 4 hours.
