Several years ago, I remember someone suggesting that I sip on bone broth when I was feeling like I was coming down with a cold. I honestly thought they were crazy! The only time I sipped on broth was when I tipped my bowl of chicken noodle soup up to drink the stock when all the chicken and noodles were gone.
Fast forward to about 5 years ago. I started reading more about bone broth benefits and what it can do for our health. Not only did I start drinking it but I started making it and keeping the beloved broth on hand, especially in the winter months (flu season). I like to think of it as my ‘flu shot’. Who knew it would turn out to be 77 degrees the day I decided to whip up this Chicken & Veggie Loaded Soup! That didn’t detour us – we kept scooping up a bowl. It was so good, it didn’t matter the temperature of the day.
My husband is not a fan of drinking a mug of broth and I know some of you might feel the same. Chicken & Veggie Loaded Soup using BareBones Broth
Ingredients
- 48 oz chicken broth
- 2 1/2 cups cooked chicken, diced or shredded (about 2 breasts from rotisserie chicken)
- 2 tbsp butter, ghee or avocado oil
- 1/2 onion, diced
- 1 cup diced celery
- 2 1/2 cups cauliflower florets (just the floret) cut into (roughly) 1/2 in by 1/2 in.
- 2 cups broccoli florets (same as cauliflower)
- 1 cup mushrooms, roughly chopped
- 1 14oz can fire roasted diced tomatoes
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp dried parsley
- 1 bay leaf
- 1/2 tsp pepper
Instructions
- In large pot, melt your fat of choice on medium heat. Add onions and celery, stir and let then come close to translucent.
- Add in cauliflower, stir to combine and incorporate the “juices” …then add in mushrooms and broccoli – stirring to completely incorporate. Let it go for about 5 min.
- Dump in the drained canned tomatoes, then add in the chicken broth and seasonings/bay leaf….now the diced or shredded chicken. Stir and let it simmer for 30 minutes.
- Find the bay leaf and take it out (or just find it when you “bowl it up”) and done!
- Eat!
