Fudge. Need I say more? I guess I should say more! This time of year (if you’re reading this in December), I see fudge everywhere! And every year, I tell myself to make a fudge with decent ingredients. Well, this is the year! Taa-daa, Chocolate Mint Fudge is here!
I finally decided to give it a-go and I don’t know why I waited so long! It took mere minutes! Actually, (truth be told), I was making a frosting a handful of months back and I stored the leftovers in the fridge. When I pulled the “frosting” out a little later, it resembled fudge. All I did was tweak the ratio a bit, added some peppermint extract and this Chocolate Mint Fudge was born!
Take the Edge Off
This time of year can be crazy. I mean, we’ve got shopping to do, wrapping and decorating. Then of course, there’s hosting parties, going to parties and seeing family that you haven’t seen all year. It can be exhausting and though this time of year is my favorite time of year, I do reach for that little treat to “take the edge off”. This Chocolate Mint Fudge is what you might need to do the same!
Seriously – I urge you to make some ….hide it in the fridge and then just grab a piece when you feel like you are about ready to go cray! This fudge is only 3 ingredients and super easy to make. You can easily whip this up without any stress added to your life. Just keep a little stash for yourself (I won’t tell anyone if you don’t) and there’s no guilt because ingredients are a-o-k! Just remember – it is a treat! One square per day 🙂
Speaking of Chocolate Mint ….
I have a delicious Peppermint Hot Chocolate. In fact, I am sipping on a mug right this minute! No lie. It’s also super easy to make ….although not as easy as the packets BUT easy enough to whip up and feel good about it. The ingredients are legit!
Ok, back to the fudge – if you don’t want the mint taste, by all means, leave it out. It’s just as good without it! I really love peppermint this time of year so this Chocolate Mint Fudge will be made often ….but I venture to say, I’ll leave the peppermint out if I make this throughout the year.

Chocolate Mint Fudge
Notes
*Place can in refrigerator to solidify if it’s a liquid when you open the can.
Ingredients
- 1 can full fat coconut milk (top solidified part only)*
- 1 bag of Lily’s semi-sweet or dark chocolate chips
- 1/8 tsp peppermint extract
Instructions
- Warm coconut milk in a pot with low flame. Do not let it come to a boil.
- Add chocolate chips to pot and stir around to incorporate and melt. Once melted, remove from heat and stir in peppermint extract.
- Line a loaf pan with parchment paper, keeping paper coming up over sides so you can pull the fudge out.
- Pour in the melted chocolate mixture into pan and shake gently to allow the mixture to reach all the sides of pan and level out.
- Place in the refrigerator for 2-3 hours to harden. Once hardened, pull fudge out of pan, using the parchment paper and lay on cutting board. Cut into desired amount of pieces. (I cut into 12 pieces)
