There have been times that I guzzled down some concoction of green juice just because I wanted the benefits of all the greens going straight to the cells. It didn’t taste good – I mean, who am I kidding? Liquified greens and veggies??! Unless you add in some fruits and maybe even sweeteners, bitter greens just aren’t that tasty.
I love cooking up greens in a good healthy fat ….and of course season it up with salt, pepper and garlic. That’s a go-to for me almost every morning for breakfast. Eating greens is a great way to get all the benefits and the fiber. Once you order the Supergreens, you can make these Coconut Butter Power Balls AND the couple of other recipes I have coming your way — “Green” waffles and Supergreens Chia Bowl! Woohoo!
- 1/2 tbsp coconut butter, melted &
- slightly cooled
- 1 tbsp Paleo Valley Supergreens
- 1 tbsp shredded coconut + 3 tbsp’s
- for dusting
- 1 tbsp honey
- Mix coconut butter with Supergreens & shredded coconut.
- Add in honey to combine.
- Using a small melon baller scooper, scoop out into your hands (you may need to refrigerate about 5-10 min to solidify a bit in order to keep a ball form) and roll into a ball.
- Place the ball gently into a small bowl of shredded coconut & toss to cover the ball with coconut. Repeat with remaining dough.
- Tuck away in fridge for minutes*
- Enjoy!
- *These don't need to be refrigerated. They are best at room temperature. Store in an airtight container. If you prefer to keep them stored in fridge, set the desired amount out for about 15 minutes before eating.
