Can you believe my daughter doesn’t like guacamole? WHAT?!? I love avocados and guacamole! So I have no idea where she came from. I also have a love for cilantro so decided to combine the two and make a Creamy Cilantro Guacamole! (…and btw, adding cilantro & lemon will keep my daughter even further away from this deliciousness, which is a-o-k with me!!)
It’s creamy enough to use in a piping bag but thick enough to still use as a dip. I added a little water to a few tablespoons of this guac and drizzled it on a salad.
We all know that avocados are one of the healthiest fats around! It’s not only great for nutritional benefits BUT I’ve used on my hair and skin as well. I just mash up about 1/2 avocado with an egg yolk and a couple of tsp of melted coconut oil. Works wonders and you usually have these ingredients on hand so it’s an easy go-to when you want to “freshen up”.
Okay – back to the creamy guacamole! I used paleo mayo to cream it up & you can make your own with this recipe here or you can purchase this one if you’re not up for making your own. Either way, it totally adds the perfect touch to “cream it up” 🙂
So have at it! Summer BBQ’s are approaching and I believe this would be a great addition to the table!

- 1/4 cup paleo mayo
- 1/4 cup olive oil

- 3 tbsp chopped cilantro
