Could this possibly be a margarita gone keto??? I’m kidding BUT I will say that if you’re going to have a drink and don’t want all the crud in your traditional cocktails, this might be just what you need! The creaminess comes from full fat coconut milk and it’s sweetened with swerve ….so if you make the recipe as it is written, the tequila is really the only downfall.
I don’t drink much at all. I may have a cocktail every 6 months or so and even with that, it’s usually just one and it’s usually a vodka-club soda. To spruce that up a bit, I add some Lemon Drop Stevia and it’s very close to the sugar ladened lemon drop cocktail that’s served in a beautiful martini glass. My hubby has made a few mojitos with me in mind and he’s created some great drinks that I will have to share with you as soon as summer hits and he’s breaking out the fun drinks vs. his beer that he loves during the winter months.
I know we are meeting up with friends this Cinco de Mayo so I decided to whip this up to see if it’ll pass to serve — that way we are only making up one drink concoction and just keeping that blender flowing with the same ingredients. I am actually typing this up with numb lips – haha! I have tested a glass of this drink and I will be proud to serve this to friends. And that’s why I’m sharing it with you! Perhaps you can get some guilt free drinks on with friends this Cinco de Mayo ….or any other time for that matter. I truly feel that I will be loving this on a hot summer night!
My drink of choice many years ago was a White Russian! OMG. I loved how creamy it was …and though you tasted alcohol, it was somewhat masked behind a hint of chocolatey creaminess. I was never really a huge margarita lover and I don’t know if it was because of the tequila vs. vodka flavor or that I just didn’t care for lemon-lime flavors. I did grow to like them more if the rim was dusted with salt and there was lots of ice! So here enters my version of a margarita that fits the creamy bill but gives you all the feels of the traditional margarita flavors.
I add in full fat coconut milk to cream it up and to add in some fats — why not?? I also use limes and lime flavored La Croix so it’s really not a bad drink for you to indulge in! Again, the tequila is really the only “bad” thing and from what I hear, it’s the most paleo you’ll get when choosing an alcohol. So, yay for that! If you’re not a coconut flavor fan or would prefer it in a cocktail with pineapple, I hear ya BUT I will say that I didn’t taste the coconut flavor at all. It really was just a nice addition of cream …..no coconut flavor in the forefront at all. If I had tasted it, I probably would have adapted the recipe to be more of a pineapple margarita vs. the traditional. That said, it’s really an easy drink to make and very easy to drink! SO sip slowly…..and enjoy!
- 1 can lime flavored La Croix (or any lime flavored sparkling water)
- 1/2 cup full fat coconut milk (canned shaken, not separated)
- 2 limes, juiced
- 1/4 cup tequila
- 1 tsp swerve (or sweetener of choice)
- salt for rim of glass
- lime for garnish
- ice
- Pour all ingredients into your blender and whip up! Easy!
- Add ice to make a blended creamy margarita or just pour into glass and serve over ice.
- Using some of the squeeze lime, wipe the rim of your glass with it and dip your glass into salt to line the rim.
- Garnish your glass with lime if desired by slicing one lime into 1/4 in thick slices, then making a slit from rind to center of sliced lime.
- ENJOY!
- This recipe makes about 3 - 8oz drinks. Double/triple as needed.
