Are you team Crock Pot or team Instant Pot? Or both?? I definitely lean more toward the Crock Pot. I like that I can set it early in the morning and not have to deal with it (at all), until many hours later. This recipe for Crock Pot Cauliflower Risotto w/Sweet Potatoes came together out of pure laziness. I can’t lie – I wanted to dump and have it ready when I got home after a long day!
To my surprise – it turned out pretty freakin’ good! I didn’t even anticipate it being a “risotto” but when it was done, I tossed in some parmesan cheese and woah – it was game changing!
Instant Pot vs. Crock Pot
For all you Instant Pot lovers, I am sure this Crock Pot Cauliflower Risotto w/Sweet Potatoes can be made in the Instant Pot. I haven’t tried it but will gladly give it a-go at some point. If you decided to try the Instant Pot, pleeease let me know what you did.
One of the things I love making in my Instant Pot is this Chicken Chili Verde w/”Rice”! It’s such a perfect fall food and since it’s made in the IP, it comes together pretty quickly. And likewise with switching crock pot recipes over to IP, you can switch this one up and make it in your crock pot! With cold and flu season around the corner, you’ll be armed and ready with this soup!
With Thanksgiving coming up in the next month, this Crock Pot Cauliflower Risotto w/Sweet Potatoes would be the perfect side dish to serve! We usually head over to my sister in laws house and it’s more of a potluck style dinner. I usually bring over a few side dishes. It always helps keep you on track with your health goals if you take dishes that you can eat without a reaction. Trust me – this Crock Pot Cauliflower Risotto w/Sweet Potatoes will definitely make the “list”!
As I said above, this recipe came out of sheer laziness. I wanted to head out for a few hours but wanted a dish ready when I got home. I knew we’d be walking in right about dinner time and I already had a rotisserie chicken on hand. So, if you’re like me and like walking in to a meal ‘all ready to go’, then this is for you! And btw, it makes great leftovers! I have added shredded chicken and even leftover (diced) pork to this “rice” and have taken it to work for lunch. It’s perrrrfect!!!

Crock Pot Cauliflower Risotto w/Sweet Potatoes
Ingredients
- 2 packages of cauliflower crumbles
- 5 cups diced sweet potatoes
- 1 medium onion, diced
- 2 cups chicken broth
- 2 cups shredded Parmesan cheese
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- To your crockpot, add the crumbles, sweet potatoes, onions, seasonings and chicken broth. Stir.
- Crockpot 4 hours on high.
- When done, toss in the Parmesan cheese and stir. Done!
- Top off with parsley or cilantro …or even some chives! You can serve this on the side of your favorite protein – or just go ahead and add some diced protein and make it a bowl!
