Isn’t zucchini an ugly word? I know that is so random but I was typing it out and kept spelling it wrong. I finally got it right and was like, “What?? That can’t be right….” and yet, it is. Anyway, I typed the word out because of a new recipe Crockpot Zucchini recipe that I want to share with y’all!
I wish I had gotten it together before Thanksgiving but it’s honestly so simple and so good, it’s any ‘anytime’ side dish. I had an intention of making a zucchini dish for Thanksgiving but didn’t want to use my oven. I have so many other meals that need roasting or baking so I opted to try the crockpot. It turned out deeelicious!
Granted, it’s 4 hours on low. SO – if you can’t be around the house at the 4 hour mark, I can’t promise it’ll turn out. I say that because the tenderness was perfect …..any longer, it may get a little mushy. If you have a fancy crockpot that just turns off, then you’re good to go!
You don’t need liquid for this Crockpot Zucchini Bake. The squash gives out enough liquid and it allows the pork rinds to stay a little crispy on top. I would double the batch for sure, if you’re serving more than 4. I honestly made this on a whim and hoped it would turn out. I wasn’t even taking into consideration the amount of people it would serve. I’m definitely doubling next time I make it!

Crockpot Zucchini Bake
Ingredients
- 2 large zucchini’s
- 2 large yellow squash
- 1/3 cup parmesan cheese
- 1/4 cup pork rinds
- 2 tsp Everything But the Bagel Seasoning
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Dice the zucchini and squash into 1 inch square pieces.
- Slide the pieces into the crockpot. Sprinkle on the Everything But the Bagel Seasoning, garlic powder, salt and pepper. Mix about.
- Roughly break up the pork rinds into small bits/crumbs – leaving some a bit chunkier.
- Top off with the parmesan cheese and pork rinds.
- Bake on low for 4 hours in crockpot.
