A couple of months ago, I asked what you all would like to see more of, in terms of recipes. So many of you asked for simple keto friendly recipes! I am happy to say – this Dairy-Free Chocolate Pudding is keto AND paleo friendly!
Chocoholics Unite!
If you’ve been following me for any length of time, you know that I am a chocoholic! I love a dark chocolate ‘anything’! One of my favorite treats is just a piece of 90% dark chocolate. I know 90% is pretty bold but it’s sweet enough when you’ve given up sweets for a period of time. If you like dark chocolate but are eating more of the 65-70% stuff, I highly suggest moving along each percentage til you’re at about 90%. It’s definitely a better percentage to have in your diet if you’re trying fuel with more of a keto lifestyle.
While munching on a piece of chocolate by way of a bar is my go-to, I love having desserts to turn to when I’m really wanting to treat myself. These treats are also great to have as an alternative when other sugar-ladened desserts are being served. I also have these Chocolate Truffles, that are keto-friendly as well! Since I don’t tolerate dairy too well, I generally try to make all of my keto recipes, paleo friendly as well!
Truth be told, I wasn’t sure if I should call this Dairy-Free Chocolate Pudding|Keto & Paleo Friendly, a mousse or a pudding. When whipped up, it resembled a mousse but after sitting in the fridge for a bit, it seemed more pudding-like. Either way, it’s a very quick recipe to whip up and gives you all the chocolate goodness. Add in healthy fats and you’re good-to-go!
The recipe can certainly be adjusted to your own liking – adding in more or less of the sweetener and/or cocoa powder. It’s all up to you. I always suggest ‘making it your own’! So have it at and let all the chocolate lovers unite!
Chocolate Mousse – Dairy Free | Keto & Paleo Friendly
Ingredients
- 4oz cream cheese (dairy free =Kite Hill Cream “Cheese” Spread)
- 1 can full fat coconut milk (top solid part only – put into fridge if necessary
- to solidify)
- 3 tbsp unsweetened cocoa powder
- Stop there if you’re ok with an unsweetened treat! Otherwise add in:
- 4-5 tsp (taste test!) monk fruit sweetener (I use ZenSweet)
- If desired, grate or thinly chop up a bit of a dark chocolate bar, for topping
Instructions
- In a medium size bowl, whisk away all ingredients.
- Set In refrigerator for an hour or two. Scoop into small ramekins for individual servings and store in fridge.
- OR – just eat right out of the bowl!
