Woohoo! I finally figured out how to get some content on my site! It’s been quite a while since I’ve posted a recipe. It’s because I had no idea how to navigate the upgraded word press. I know …..it was probably easier than I thought but I just don’t like change! LOL. Dairy Free Spinach & Artichoke Dip has been waiting to be shared.
Now – I must try and remember all the recipes I have saved on my phone and get them up over here!
First up, is the Dairy Free Spinach & Artichoke Dip! This has been saved in my drafts for a couple/few months so I am happy I can finally share it here. I used Kite Hill Cream “Cheese” so this is perfect for anyone who cannot handle dairy. If you’re ok with dairy, by all means, use regular cream cheese if you so choose.
This dip is a family favorite but I’ve taken it to a few get togethers and it surely is a crowd pleaser! It leaves you coming back for more …..and more! I love to eat this Dairy Free Spinach & Artichoke Dip with grain free crackers or chips. Scooping it up with mini bell peppers or cucumbers is always a good idea too.
More Paleo Swaps
While I’m here, I’ll share another dip that has been a great paleo swap! I can’t eat any type of bean – and that includes chickpeas. My stomach just isn’t happy about those foods so I opted to make a favorite of mine, into a paleo version. This Veggie Hummus is made with cauliflower so no tummy issues here 🙂 If you’re like me, I suggest giving this hummus a try.
I’m going to leave this post short and sweet. While I could finally get the text working on here, it took me a LONG time to load the photos (days). There was another glitch I had to deal with. Who the heck knows if it is user error (me!) or the upgrade with word press. Either way, I’m happy it’s finally working and I can start sharing recipes again!
Dairy Free Spinach & Artichoke Dip
Ingredients
- 2 cans artichokes, roughly cut
- 8 oz package of spinach
- 1 tub Kite Hill Cream Cheese
- 1 cup paleo mayo
- 1/2 large onion, diced
- 4 garlic cloves, minced
- 1/4 cup + 1 tbsp nutritional yeast
- 2 tbsp butter or ghee (or coconut oil)
- Pinch of salt & pepper
Instructions
- Preheat oven to 350 degrees.
- In a large pan, melt butter and toss in diced onions. Cook onions until nearly translucent. Add spinach until wilted (about 2-3 min). Keep flame to low/medium.
- Stir in the minced garlic & artichokes. Once combined add in the Cream Cheese, Mayo and Nutritional Yeast. Season with salt & pepper.
- Transfer the entire contents into a 6×8 baking dish and place in 350 degree oven. Bake for 30 minutes.
- This is a dairy free recipe but feel free to top off or mix in your favorite cheese!
- Let cool about 15 minutes before diving in 🙂
- Enjoy with your favorite grain free tortilla chip, cracker or veggie scooper!
