If you like dark chocolate, almonds and dates, you will love this easy as heck recipe! These Dark Chocolate Almond Stuffed Dates are the perfect ‘pop a sweet treat in your mouth’ (or two) and have no guilt in doing so!
One of the best parts of my visit to Japan, was seeing the little local stores that my daughter shopped in. There’s a place called Xpiari, which is right off Tokyo Disney/Disney Sea. Xpiari is basically an outdoor mall with plenty of shops, restaurants and little “grocery stores”. There were many cute little boutiques BUT my favorite store to shop in, was a store with little snacks and chocolates! And that’s where I grabbed a bag of Dark Chocolate Almond Stuffed Dates. I decided I had to recreate this scrumptious little bites as soon as I got home!
Like quite a handful of my recipes, it’s very hard to even call it a recipe! So we’ll just say, “here’s what I did”. Another sweet treat recipe that is super easy, are these ‘Chocolate Cracker Toffee Bites‘. I really love the sweet/salty aspect of sweet treats so these are right up your alley if you feel the same!
Btw, if you didn’t read my previous post, I chat a bit about our trip to Japan and the fact that I realized I wasn’t really the foodie I thought I was. (You can read about it here!) However, when it comes to dark chocolate – I’m all over it!!! As mentioned, if you like all 3 of these ‘foods’, you will love these Dark Chocolate Almond Stuffed Dates. They come together so quickly and are really hard to stop at one! Though, why would you? Double or tripe the recipe as needed. I try not to keep too many on hand at a time because they truly are easy to eat!
I hope you give them a try! Let me know if you do …..and what you think!
Dark Chocolate Almond Stuffed Dates
Ingredients
- 15 pitted dates
- 15 salted/roasted almonds
- 1/3 cup melted dark chocolate
Instructions
- Melt your favorite dark chocolate in microwave in 25 second increments. I use a ramekin so the chocolate will have depth.
- While chocolate is being melted, stuff almonds into each date by carefully sliding into the hole from where it was pitted.
- Once chocolate is fully melted, drop in 3 dates at a time into the ramekin. Roll around with spoon to evenly coat. I use toothpick to take each date out of ramekin and let the excess chocolate drip off.
- Lay each date on a cutting board covered with parchment paper (or something sturdy enough so you can transfer to refrigerator).
- Once all dates are coated with chocolate, place in refrigerator for 15 minutes to solidify chocolate.
- Keep stored in fridge! Try not to eat them all at once!
- (Double/triple recipe as needed!)
