Have you ever seen or heard of the show, ‘Semi-Homemade’? I used to watch it many, many years ago. I have no idea if the show is still on but the concept was great! Her name was Sandra (I believe) ….and she would make meals using some convenience foods to save time and money. This Easy Asian Shredded Chicken is just that – semi homemade. And it’s only 2 ingredients. It’s hard to even call it a recipe!
Back when I watched the show, I was very much into creating every single meal on my own. I almost mocked the fact that she didn’t roast her own tomatoes and used a can or jar of roasted tomatoes. Pffff! What the heck did I know? She was genius!
What Was I Thinking?
It’s funny how I used to make every thing from scratch when I had 3 children under foot and needing to be toted everywhere. I was however, a stay-at-home mom, so that gave me some time while they were in school to get things done. However, there wasn’t much time between the volunteering, laundry of family of 5 and all the little incidentals that always seemed to come up. These healthy convenient foods would have helped so much in those days of wonderful chaos!
Now, I have 3 grown adult children – one of which is still at home but 9 times out of 10, makes her own meals. I find every little way, to make a meal simplified. I always try and use convenient foods that are properly sourced and without a lot of ingredients that I’m unfamiliar with. Primal Kitchen Foods has the best products for these meals, that I want to make quickly but have delicious, homemade flavors!
Semi-Homemade
In this Easy Asian Shredded Chicken recipe, I use Primal Kitchen Foods ‘No Soy Teriyaki Marinade’. I used to love ‘teriyaki anything’ but when I gave up soy, I found it hard to find a brand that didn’t contain that ingredient. Here’s where my “homemade skills” went into action. I created a few marinades that would give me that asian flavor. While they are still great recipes to have, I am loving the fact that I can get the same flavor in a bottle, without soy and ingredients that I don’t care to have.
Here’s the recipe for the Easy Asian Shredded Chicken: chicken and ‘No Soy Teriyaki Marinade. That’s it. I’ve made this “recipe” in both the crockpot and instant pot so you take your pick! There’s also this Crack Chicken that is just as simple and made in your crockpot, if you want to give that a try too. I love all recipes that can be dumped ….and go! Then eat later!
My daughter is very honest with her opinions when it comes to the recipes I make. When I heard her say, “OMG ..this is so good. It reminds me of the Chicken Salad at Rascal’s!” I knew it was a winner! And guess what? It’s so freakin easy! I can’t even take credit for this Easy Asian Shredded Chicken! It’s all the “semi homemade” convenience of PKF, that makes this so good! Either way – I’m posting it here because you just gotta have this method in your hands. It’s easy, simple and delicious – so have at it and enjoy!
Easy Asian Shredded Chicken
Ingredients
- 3 skinless/boneless chicken breasts
- 1 bottle of Primal Kitchen Foods, No Soy Teriyaki Marinade
- sprinkle of salt, pepper and garlic powder
- water (if using crockpot)
Instructions
- Instant Pot Method:
- Lay the 3 chicken breasts down in the Instant Pot. Sprinkle on salt, pepper & garlic powder.
- Pour the bottle of No Soy Teriyaki Marinade over top of the chicken.
- Turn your Instant Pot to ‘Manual’ and set it for 15 minutes (the time to come to pressure doesn’t count for the 15 minutes cooking time – so allow for the extra time – usually 9ish minutes).
- Once done, slow release and carefully take lid off. Shreds easily with 2 forks! Done.
- Crockpot Method:
- Lay the 3 chicken breasts in crockpot. Sprinkle with salt, pepper and garlic powder.
- Pour bottle of No Soy Teriyaki Marinade over top of the chicken. Using the same bottle, fill 1/2 the bottle with water and add to the crockpot.
- Place lid on crockpot and turn it on low for 6-8 hours.
- When done, it will seem watery but shred the chicken with 2 forks in the crockpot – all of the liquids will incorporate.
- Done!
- Top anything with this chicken! Cauli-rice, veggies, greens …then sprinkle on some sesame seeds and green onions and enjoy!
