It’s a fact that my favorite fish is salmon. It was actually the only fish I ate for many years. I just love the buttery flavor and to me, it didn’t seem as dry as others. Now that I cook my own food, I have definitely found a love for most fish but hands down, salmon is my fav!
I never really tried many recipes with cooking salmon – or any fish for that matter. It seemed that my go-to was always to simply season and broil. In fact, that was how I cooked most of my proteins ….just season the meat and toss under the broiler. And I don’t know about you but the salmon skin is so freakin’ good, that broiling or cooking in my cast iron was the best when it came to keeping that skin crispy! I had been wanting to try the foil wrap method but I was always apprehensive as I knew the skin wouldn’t be as crispy as I like. Well, I do like my crispy skin but the skin with this foil wrapped method is equally as good because of the flavors all wrapped in tightly!
I have started getting my fish from a company called ‘Seaforth Fish‘ and I have been so pleased with the quality and flavor. Their Alaskan fish is wild, sustainably and ethically caught! I made their Rock Fish the other day and it was so good! I had never had it before but I can honestly say it’s now running a close 2nd to my favorite (salmon). They offer a monthly delivery program (CSF) so you can get these goods right to your door each month! Onto the recipe of this mouth watering Alaskan Sockeye Salmon – you’ll just need a few ingredients and foil. I love that this recipe is a cinch to clean up too! Anything that will save time with the cleaning process is a huge win in my book!
If you’re a salmon lover like myself, you know that salmon is delish on its own but slather some ghee or butter on it with a few seasonings…..and omg! Perfection! It’s so tasty that all you need on the side are simple veggies, greens or your favorite carb. I’m sure this can be done on the BBQ to keep the house cool in summer months but haven’t tried it yet. I’ll put that on my list of things to do but if you should do so, please let me know! ENJOY!
- 1.5 lbs sockeye salmon
- 1 lemon, juiced
- 3-4 garlic cloves, minced
- 3 tbsp ghee or brown butter ghee
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tbsp dried rosemary, crushed
- Preheat oven to 420 degrees.
- In a small bowl, mix together the lemon juice, ghee, minced garlic, salt and pepper.
- On a foil lined backing sheet (enough foil to fold over & close), place salmon on top. Spread the lemon/ghee mixture over top the whole salmon evenly. Sprinkle on the crushed rosemary.
- Fold the foil lengthwise over salmon, securing by folding the foil pieces together. Then grab ends of foil and fold up until it's secure.
- Bake at 420 degrees for 10 minutes. Open foil and broil for 10 minutes.
- Serve with your favorite veggie side or salad!
