While the world around us seems so uncertain, I know the only thing I can control is what goes on in my home ….and right now, baking is calming the mind and easing my sweet tooth. What about you? What’s something that is helping you stay ‘sane’ with all that’s going on around us? These Fudgy Paleo Brownies might help you (or your little ones) with sanity – they are good and easy to whip up!
My daughter made some pretty amazing brownies around the holidays. I don’t know what recipe she used but they were freakin’ amazing! During our isolation one day, I felt like baking – and eating brownies. She couldn’t remember the recipes so I just said, “Nevermind. Let’s wing it and start from scratch so I can put it on the blog.” And that’s what I did. The first batch was ‘ok’ but I wasn’t feeling like they were good enough to share. My hubby loved the first batch but he also likes cake. I don’t. I wanted a more “fudgy” texture. So onto another try of a Fudgy Paleo Brownie!
Take 2 was all it took. A couple of tweaks from the first recipe and the 2nd batch was exactly what I wanted! While we all have our preferences, I think you’ll be happy with these. If you like a cake-ier brownie, add another egg & I think that will do the trick for you.
Speaking of cake! For all you cake lovers, I have this recipe and it just might be right up your alley! This Paleo Chocolate Cake is actually something I enjoy – even though I’m not a huge cake lover. The frosting and bits on top are my fave part of the cake!!
I am not being insensitive as to what’s going on around us. I really just want to help with recipes that will make you smile, not detour from health goals and distract, if even for a minute. These Fudgy Paleo Brownies are certainly something you could get your kids involved in baking. Or just go seclude yourself and get some alone time in the kitchen! Either way, once they are done baking, you have a delicious treat to look forward to.

*If you prefer a cake-ier brownie, add another egg.
**TIP! Place a paper towel square over top of the brownies to “soak up” the condensation that might occur. It helps preserve the brownies original state 🙂
Ingredients
- 1 cup almond flour
- 1/2 cup dark cocoa powder
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 cup dark chocolate chips
- 1 1/2 cups cashew butter
- 1 egg*
- 8 tbsp butter, melted/cooled
- 1/4 cup honey
- 1 tsp vanilla
Instructions
- Preheat oven to 350 degrees.
- Line an 8×8 baking pan with parchment paper.
- In a bowl, combine the almond flour, cocoa powder, baking powder and salt.
- In another bowl, whisk together the cashew butter, butter, honey, egg and vanilla.
- Pour dry ingredients in with the wet and whisk to combine. Add chocolate chips and mix in with a spoon.
- Pour brownie batter into lined baking pan and spread evenly to hit all corners and edges.
- Bake at 350 for 20 minutes. Take out and let cool on cooling rack. Do not over bake. The brownies will continue to “bake a bit” once out of oven.
- Once cooled, remove from pan by lifting parchment paper and cut into desired squared piece sizes. I cut mine into 12 pieces.
- Enjoy! Store in airtight container** in refrigerator for up to one week.
