Sometimes you start out making one recipe and then it quickly turns into another. Has that ever happened to you? I had ground yak ready to go and I had thought about making meatballs ….and within a turn to the fridge for an onion, meatloaf came to mind! Since I already had my muffin tin sitting out, I decided on trying Individual Meatloaf Cups!
What I like about Individual Meatloaf Cups, is that they can be stored in an airtight container in fridge and you have a serving ready to go. No need to pull out a loaf and slice a piece off …..just a grab’n’go and you’re set. That’s always a win with me, especially when it’s a rushed morning and you want to make a quick lunch to take to work. (I know – I sound lazy ….because really? How long does it take to slice a piece off of a loaf? Here’s one, if you’re interested in a loaf!)
I use ground yak but obviously any ground meat will do! I just love the flavor and benefits of yak. If you haven’t tried it, you must! It tastes a lot like ground beef but juicier! It’s lower in fat so if you’re following more of a keto diet, you’ll want to add some fat to the meat or to your plate. It’s lower in calories and is higher in good oleic acids and polyunsaturated fats. That’s approximately 30% lower in “bad” Palmitic acids than beef, which is associated with heart disease and higher cholesterol.

Ingredients
- 1.5 lbs ground meat (I used Yak)
- 2 eggs
- 1/2 onion, diced
- 1 cup chopped mushrooms
- 1 large handful spinach leaves, chopped
- 2 garlic cloves
- 3 heaping tbsp Spicy Ketchup
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat oven to350 degrees.
- Whisk eggs in a small bowl.
- In a large mixing bowl, combine all ingredients, including whisked eggs.
- Using a large scooper, scoop large “balls” into a muffin tin. Any remaining meat mixture can be distributed evenly amongst the meat already placed in tin.
- Take back of spoon and gently push down, ever so slightly – just enough to make sure meat is nicely tucked into the muffin tin.
- Bake at 350 degrees for 30 minutes.
- Serve with cauliflower mash, cauli-rice or on top of power greens!
