When eating keto, it can be repetitious in terms breakfasts, right? I mean eggs, bacon and greens are good but sometimes you want to change up your breakfast and Keto Granola can be just the thing you need!
Do You Count Macros
I don’t know much about macros and I’m certainly not going to pretend that I do. What I do know, is that there are a few types of nuts in this recipe and yes, I believe that takes up the carb count a bit. I did try and use the lower carb nuts but all in all, it may be a bit much if you are in fact sticking to a strict macro plan. That said, if you truly are in ketosis and are fat adapted, this shouldn’t kick you out of ketosis and it is most definitely is a great source of fats and fuel for energy!
Back in my 20’s, I used to pick out the lowest fat granola on the shelves. I honestly don’t even know what the ingredients were but I did in fact look to see a highlighted print that read “Low Fat”! Was I alone? Did you all do the same? I’m so glad I got myself out of the ‘no to low fat’ craze! I used to wonder how I could eat so low fat and run 4-6 miles per day/5-6 days per week and still have the belly bulge! If I only I knew then, what I know now.
Don’t Fear The Fat
Fat doesn’t make you fat. I know that now. I also realize that the fog I used to be in was due to my brain being deprived of healthy fats! Doctors tell us to feed our children full fat milk when they transition to regular milk because their brains are still developing. There’s so much truth to that statement as we need the healthy fats to keep our brain healthy. As adults we follow diet trends and ignore hunger signals because that doesn’t fit into our “plan” but if we sat and watched how our children eat (intuitively), we would probably be a much healthier society. We feed our children healthy fats by way of full fat products with minimal processed food because we know they are growing but we deprive ourselves of the same principal. No, we aren’t growing BUT we still need the same principal applied to us because we need to keep our bodies thriving and full of energy! Pulling from our stored fat will do just that – keep us satiated with healthy fats and full of energy! This Keto Granola fits the bill …..keto or not!
Snack or Cereal
As mentioned in previous blog posts, my daughter is eating more of a keto lifestyle than I am and I created this recipe because she saw me eating my paleo granola and wished she could have some. I decided to give it a-go without the honey and dates that I use in my paleo recipe. She loves the Keto Granola and ate it for breakfast the very next morning. Though she doesn’t feel the need to snack, she loves having the option to take a little baggie along with her when she knows she’ll be out and about for a long while, at rehearsals for hours on end and even to take to amusement parks or the movies. It’s kind of a good idea to have something like this on hand when you’ll be at a social gathering and know that the snacks available won’t be the healthiest choice. So while I love eating granola for breakfast, this Keto Granola is also a great snack option…but I’ll warn you, it’s addicting! Pack responsibly!
Eat well and be happy!
- 1 cup diced walnuts
- 1 cup pecan pieces
- 1 cup pumpkin seeds
- 1 cup coconut flakes
- 1/2 cup sliced almonds
- 3 tbsp's coconut oil, melted
- 2 1/2 tbsp's Xylitol (or favorite low glycemic sweetener)
- 1/2 tsp cinnamon
- Preheat oven to 250 degrees.
- Toss all ingredients in a bowl to combine*.
- On a sheet pan lined with parchment paper, lay the mixture in single layer on pan. Bake at 250 degrees for 15 minutes, gently tossing about 1/2 way through.
- Let it cool and serve with your favorite milk, or munch on it by itself .....or toss on yogurt!!
- *I like it chunkier but if you prefer it to be smaller pieces, toss in food processor and give it a couple of whirls.
