There isn’t a lemon ‘thing’ I don’t love. I really do love all things lemon, so when my daughter (yet again) requested a keto lemon recipe, I was all over it! This Lemon Pound Cake is not only keto approved but paleo approved!
Summer is just around the corner and I can totally feel it in the air. It’s been about 80 degrees the last day or 2 and I love it! It’s nearly mid-June and I’m hoping June gloom just passes us by this year. I’m not working summer school this year so I’m really hoping for some clear skies, warm temps and lots of fun in the sun!

With not working summer school, I do hope to get more done this year than ever before on my blog and Beautycounter. Summer Lovin’ Lemon
Ok – so there ya go with my summer agenda but let’s talk about how good lemon and summer go hand in hand. Right? I mean, lemon water is so refreshing on hot summer days. This Keto & Paleo Lemon Pound Cake is pretty summer friendly if I do say so myself. I actually felt bad because I made this cake a few times to perfect the recipe and I ate most of each loaf! Here I was trying to please my daughter and I pretty much took over! Another lemon recipe you might like are these Lemon Cookies! They are always a crowd pleaser!
I know this Keto & Paleo Lemon Pound Cake was long awaited because I had one more tweak before I shared it with you all – so I hope you like it! Please let me know what you think! Enjoy!
- 2 1/4 cups blanched almond flour
- 1/2 cup ZenSweet (or low glycemic sweetener of choice)
- 6 eggs
- 1 tub Kite Hill Cream “Cheese” Spread (8 oz)
- 1/2 cup butter, melted/cooled
- 1 tsp baking powder
- 2 tbsp’s lemon extract
- 1 tsp pure vanilla extract
- Zest and juice of 1 lemon
- 1 tbsp coconut oil, softened or melted/cooled
- 2 tbsp full fat coconut milk (top, thickened layer)
- 2 tbsp cashew milk
- 1/2 tbsp ZenSweet (or sweetener of choice)
- 1/2 tsp pure lemon extract
- Preheat oven to 350 degrees.
- In a bowl, whisk together the almond flour, sweetener and baking powder.
- Mix cool/room temp butter, cream “cheese” together with hand mixer until fully incorporated. Whisk eggs in another bowl and slowly mix with butter & cream “cheese” using hand mixer (should be a smooth and creamy consistency).
- Stir in lemon & vanilla extract, as well as lemon juice and zest.
- Line a bread loaf pan with parchment paper. Pour in batter and smooth top of batter.
- Bake at 350 degrees for 45 minutes.
- While loaf is in oven, whisk together the glaze ingredients in small bowl. Keep mixing/whipping until glaze is smooth and creamy.
- When time is up, take loaf out of oven & let cool on cooking rack for 20 minutes- take out Lemon Pound Cake by grasping parchment paper ends and set on cooking rack until cooled.
- Slice and eat on its own or with the Lemon Glaze! And always with a cup of coffee!

This looks delicious! Do you take the loaf out of the pan and then cool for 20 minutes? Or cool in the pan for 20 minutes?

Hi there! Thank you so much! Yes, I let the loaf cool in pan for 15-20 minutes, then take out of pan by holding the ends of the parchment paper and I lay it on cooking rack. Thanks again!
