Who doesn’t love a good meatball?? I will admit, there were years where I preferred a meat sauce with my “pasta” because I was just too freakin lazy. It’s not hard to roll a ball up …but ya, can be a little time consuming. I was craving meatballs one day and mixing up some sausage with ground beef in “ball form” sounded so good to me! These Meatballs w/Mushroom Sauce came together seamlessly and are so, so good!
Food prepping on this particular Sunday was on fire. I had so many things going and yet, didn’t even have a plan. I had mushrooms to use up so started stirring those up with a few ingredients I had on hand using the meatball grease that was already in the pan (why dirty another pan, right?). Then it hit me – toss the meatballs back into the pan with the mushroom sauce ….and voila, Meatballs w/Mushroom Sauce was born!
Meatballs For Munching
What’s one of your favorite munchie foods when you’re at a potluck? For me? I like the pot of meatballs just hanging out, waiting for me to plate a few (or more!). Many, many years ago – I was probably 20ish – I was at a church potluck and there were a few crockpots of meatballs. I stood there looking around for pasta or something to put my meatballs with. Honestly, I didn’t understand the concept of eating the meatballs alone! That was so weird to me. But clearly it’s a thing. I didn’t find it odd as time went on, as meatballs ‘stand alone’ food and what an easy potluck item to share! These Meatballs w/Mushroom Sauce would be perfect to take along to a <holiday> get together. Though they aren’t made in a crockpot, you can certainly transfer to one to keep them warm!

Spice Up Your Life
As noted in the first paragraph, I used both sausage and ground beef in this recipe. I not only used sausage but I used SPICY sausage! If you like a little kick, I highly suggest mixing the 2 meats together because it just works! Both my hubby and daughter raved about these Meatballs w/Mushroom Sauce! If you don’t like it spicy, I would still add sausage to the ground beef but go for the mild in flavor.

Meatballs w/Dairy Free Mushroom Sauce
Notes
*If you prefer a thicker sauce, add in 1 tsp more at a time to achieve desired consistency.
Ingredients
- Meatballs:
- 1 lb ground beef
- 1 lb spicy sausage
- 1 egg
- 1/4+ cup fresh grated Parmesan cheese
- 2 tbsp Tigernut Flour (almond flour works too)
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp avocado or favorite cooking oil
- Sauce:
- 1 1/4 cup chicken broth
- 1/2 cup full fat coconut cream(solidified from top of can)
- 1/8 cup mustard
- 1 medium onion, diced
- 2 cloves garlic, minced
- 5 cups sliced mushrooms
- 1 tbsp tapioca or arrowroot starch
- Pinch of salt & pepper
Instructions
- In a large bowl, mix together your sausage and ground beef (I use my hands).
- Add in a whisked egg, parmesan cheese, tiger nut flour and seasonings. Incorporate all …using hands (works best).
- Using a medium size scooper, scoop out your meat and roll with hands to form a ball. Place on parchment paper until you are done forming all balls and ready to cook.
- Heat oil in a large skillet (I use my stainless steel) on medium flame. Carefully add meatballs and let cook about 12 minutes, tossing about to coat all sides.
- Once cooked, transfer to a plate or baking sheet.
- In the same pan, using the reserved grease ….add your diced onions and cook until translucent. Add garlic, chicken broth and coconut cream. Heat through.
- Slowly add the arrowroot or tapioca*, whisking as it’s being added. Once whisked through, toss in the mushrooms and mustard, as well as salt and pepper to taste.
- Cook through about 10 minutes. Add back in the meatballs and toss around to coat. Cook another 5 minutes, stirring occasionally.
- Serve over your favorite gluten free pasta, cauliflower rice or serve as an appetizer!
