Pizza for Breakfast
Is there ever a time that pizza won’t work? I think Breakfast Pizza could and should be a thing! Toast usually goes along side a breakfast so why not just plop your ingredients on top of “toast” and eat it hand held?
I believe cold leftover pizza can be breakfast (I am pretty sure I have eaten a piece straight out of the fridge many a mornings back in the day) but what if we specifically made a pizza for breakfast? Just put an egg on it! Right?? This recipe is no exception to my “recipes on whim” or because of a fail! (Not gonna lie!) I intentionally made a pizza crust that morning to use later in the day. That wasn’t on a whim but as I prepped the crust while making breakfast, I decided to combine the two. Voilá – breakfast pizza!
This breakfast pizza doesn’t call for any meat but don’t let that stop you from adding bacon or sausage. Or whatever it is you so choose to add on! I know that we love it as-is but my hubby did say, “Next time we should add some crumbled sausage to change it up.” (I like the way he always says “we” when he refers to something being done in the kitchen. It’s never “we” BUT truth be told, his ideas are usually spot on!). So feel free to add in your favorite meat and let me know. On a totally different note: my daughter and granddaughter will be moving back to California in a couple of weeks! I’m so excited!! They live in North Carolina and I’ve loved our visits but it will definitely be nice to be involved in their daily lives as opposed to just special occasions. That said, I’m going to be dabbling around in the kitchen a lot more, with kid-friendly meals. They’ll be staying with us until she can get settled in CA. It’ll be fun to switch gears and come up with recipes and different ideas to help keep Mazzy all fueled up with proper nutrition. I’ll definitely be trying to make it appealing and fun! So all you mommies out there – be on the lookout for new kid friendly ideas and recipes coming your way! I’m pretty sure this Breakfast Pizza is kid friendly!

I have a few pizza recipes on my blog and one is using a premade pizza crust that you could totally use for this breakfast pizza. You can find out the details by clicking here for that convenient crust BUT I also have a Meatza. This is where you use the meat as the crust! This has always been a favorite because we do love our meat in this house. While there is no “bready crust” the meat serves the purpose perfectly and gives you all the feels of pizza!
No matter what time of day you like your pizza, you will love this breakfast pizza! It can be made for dinner too! If you’re like me, eggs for dinner are a thing so make this whatever time of day you see fit — and enjoy! You can check out more breakfast ideas here!
- Meatless Breakfast Pizza
- 1 paleo pizza crust (crust recipe below)
- 1 tsp Gyro or Italian Seasoning
- 1 medium avocado
- +2 tbsp water
- 3 eggs
- 1 handful of power greens
- 8 grape or heirloom tomatoes
- Sprinkle of Gyro, salt and pepper
- 1 tsp olive oil
- Preheat oven to 400 degrees.
- 1 cup cassava flour
- 1/2 cup tapioca flour
- 1/3 cup ghee or brown butter
- 1/3 cup water
- 2 tbsp melted coconut oil
- 1 large egg
- 1 tsp garlic powder
- 1 tsp italian seasonings
- 1/2 tsp salt
- 2 tbsp olive oil
- Heat cast iron on stove - medium heat.
- Form dough into ball. Rub olive oil onto cast iron. Place dough ball in pan and push down carefully with hands to cover pan and slightly up the sides. Poke the dough with fork a few times.
- Heat on stove for 5 minutes, then place into oven for 9 minutes.
- While in oven, make guacamole with the avocado. Sprinkle in garlic powder, salt and pepper to taste. Add 2-3 tbsp water to make it more “sauce-like”.
- In a small pan, cook up 3 eggs for about 3-4 min in favorite fat. I used olive oil this time. The eggs can’t stick because you want to slide them out onto pizza ...so use your favorite pan/fat to allow for this. The egg whites will still be slimy but we’re putting it back into the oven - so no worries!
- Smear guacamole on crust, distribute the fresh greens onto guacamole. Then carefully slide the eggs into center of pizza crust. Lay sliced grape tomatoes on outer edges of crust.
- Place back into oven for 3 minutes to cook up the tops of egg whites and warm up the crust.
- Sprinkle with Gyro seasoning and salt!
- Slice up and eat!
