Reese’s have always been a favorite of mine growing up. I had a certain way of eating them too! After giving up peanut butter (tummy issues), I was sad that these little cups wouldn’t be a fun treat anymore. Nowadays, you can go grab little cups made with almond butter or cashew butter – so that’s a huge win for me. They even make them in dark chocolate!! But sometimes you just wanna have something you can whip up on a whim and enjoy. That’s where these No-Bake Chocolate Cashew Bars come in handy!
You honestly probably have all of these ingredients on hand. When I decided to make these bars, I had everything on hand. So if you’re like me and keep “essentials” in your pantry, you probably have them too! My favorite go-to nut butter are cashews but I am sure you can sub any nut butter you like.

I definitely have a sweet tooth. It’s not so sweet that I like sugary candies like gummy bears or skittles. I’m more of a dark chocoholic kind of gal. These No-Bake Chocolate Cashew Bars are my perfect sweetness! They curb my sweet tooth and yet, you don’t feel like you just ate a spoon full of sugar. I use the darkest dark chocolate I can find – usually 82%+ but you can most certainly switch out dark chocolate with a lighter percentage of dark or even milk chocolate.
I have a few other recipes on this site that offer the same vibes as these bars. They are equally as delish ….and not overly sweet. These 3-Ingredient Keto Chocolate Cups have always gotten a thumbs up! And who doesn’t love a recipe that only uses 3 ingredients?

There’s also these Keto Cups that are sure to please! When I posted these Keto Cups, I believe it was the most shared recipe I saw followers posting on IG. They are made with almond butter and since they are made in cupcake liners, they are sure to keep you on portion control (unless of course, you eat multiple!). I know a lot of people don’t like the taste of stevia but I hadn’t had anyone say it’s something the sense when eating these. We all have our preferences though but I definitely think they are worth trying! The No-Bake Chocolate Cashew Bars are made with coconut sugar so if you’re not a fan of stevia, these will work!
There are many times a piece of dark chocolate will do but sometimes you want just a wee bit more. I can pass on chips (although I do love me some tortilla chips and guac!) but put a treat with dark chocolate in front of me & my mouth starts watering. I used to be the one who went through Halloween candy and looked for the Special Dark miniatures. No one liked them so I traded! I admit, those little Special Darks are now too sweet for me. My favorite percentage is 85% and even 90% if I can find it.
Yes, I know ….that may be too dark for you so with any of these recipes, you can switch out the chocolate to your liking. My fam is more with the bitter side of flavor but I totally get those who thinks it’s just ‘too dark’! These No-Bake Chocolate Cashew Bars are the perfect combo of sweetness with the cashew butter. I don’t specify the percentage of dark chocolate to use. That’ll be completely up to you 🙂 I just hope you give these a try and keep me posted on what you think.

No-Bake Chocolate Cashew Bars

Keep stored in refrigerator til ready to grab a bar!
Ingredients
- Cashew layer:
- 1 cup cashew butter
- 1 cup coconut flour
- 1/2 cup coconut sugar
- Pinch of salt
- Chocolate layer:
- 1 cup dark chocolate chips
- 2 tbsp coconut oil
- 2 tbsp cashew butter
Instructions
- In a medium sized bowl, mix cashew butter, coconut flour and coconut sugar til well incorporated.
- Layer the cashew mixture evenly, onto a parchment linked bar pan (9×5 or 6). If it’s hard to spread, wet the back of a spoon to smooth it out into corners of pan. Place in the fridge while you make the chocolate.
- In a small bowl, add chocolate chips, coconut oil and cashew butter. Warm in microwave in 20 second intervals, mixing after each interval. Mine was fully melted at 1 minute.
- Take the cashew pan out of fridge and slowly pour the chocolate mixture on top of cashew layer. Take a back of spoon to smooth into corners or just til the pan.
- Place back into fridge for a couple of hours or until solidified. You can also put into the freezer for a quicker result.
- Cut into desired bar sizes and enjoy!
