I’ll keep this post short and ‘sweet’! I set out to make some Christmas cookies today and hubby took over the oven. He’s making a homemade gingerbread house. While I was bummed I could’t get in as much baking as I wanted to, these No Bake Chocolate Truffles happened! They are delicious so I’m not that mad about the oven being occupied!
I randomly through a few ingredients together hoping to create a no bake cookie. But then rolling them into a ball and dipping them in chocolate came to mind! So that’s exactly what I did and LOVE them!
Sharing this recipe at Christmas time, means that you can make them and share with family and friends. I know, I know ….if you’re reading this when written (December 2020), there are covid “rules”. So whether or not you will be sharing the day with loved ones, you will still most certainly want these little sweet treats in your life!

While I will be making these truffles again before Christmas, they are definitely an ‘all year long’ treat! They have healthy fats, flax meal and are refined sugar free – so while I don’t consider paleo treats “healthy”, they aren’t the typical truffle you will find in candy shops.
I hope you enjoy these No Bake Chocolate Truffles as much as we do. We barely let them harden up in the fridge before we had to taste them! Enjoy!
No Bake Chocolate Truffles
Ingredients
- Filling:
- 1/4 cup cashew butter
- 1/4 cup butter
- 1/4 cup coconut sugar
- 1/4 cup flax seed meal
- 1/2 cup shredded coconut
- 1/4 cup finely chopped macadamia nuts
- 1/2 tsp pure vanilla extract
- 1 tbsp coconut oil
- Chocolate Coating:
- 1/2 cups dark chocolate chips
- 1 tbsp coconut oil
- Optional:
- Additional coconut shreds or diced macadamia nuts, for dusting over chocolate
Instructions
- Melt both the coconut oil and butter, separately.
- In a mixing bowl, combine all ingredients, except coconut oil. Mix all together well then drizzle coconut oil over mixture and combine.
- Place in freezer for 15 minutes.
- While the “dough” is in freezer, melt the dark chocolate with coconut oil in a small bowl.
- Using a small scooper, take “dough” and form into ball like shape and dip into the chocolate. Cover entire ball and place on parchment paper. You can sprinkle any remaining coconut shreds or macadamia nuts, if desired. Or leave as a chocolate shell!
- Repeat with remaining dough.
- Put into refrigerator to solidify the chocolate, for at least 30 min. Keep stored in fridge and hide from the fam so there’s more for you 🙂
