I rarely eat oranges. I don’t know why….they just aren’t my thing but I grabbed a few at the store one day (I think I was hungry!) and they sat there for a couple days. I realized that I better use them somehow/someway. So I opted for an Orange Dressing!
It came together so quickly. I had prepped some chicken thighs a couple of days before so I added some of this vinaigrette to the thighs and warmed….and yum! It really changed up the chicken in a fresh and flavorful way!
A couple of days later I tossed it on some chopped cabbage and romaine, with diced chicken and bam! Again….so yum!
I think it’ll be a perfect addition to many of your dishes and with summer coming, I believe I’ll be using this quite a bit! So, I think you should go grab some oranges! 🙂
- 1/4 cup olive oil
- 1/4 cup paleo mayonnaise
- 1/4 cup + 2 tbsp fresh orange juice
- 2 tbsp raw honey
- 2 tbsp apple cider vinegar
- 1 tsp orange zest
- 1 tsp mustard
- 1 garlic clove, minced
- 1/4+ tsp salt
- Combine all ingredients and blend with an immersion blender.
- Simple. Good. Quick.
