With the warmer months creeping in, I thought I would make a treat that was refreshing and incorporated some berries! And you know me, I always have to have some kind of crunch. So here ya go – these Paleo Berry Parfait’s are dairy free and offer a creaminess, crunch and a burst of berry bites!
Dairy Free Whipped Coconut
Ok. Let’s chat coconut whip. I used to make this all the time and had no issues. Then a few months ago, I tried to make it and it didn’t work out for me – at all! I don’t know that I completely understand why …but it may be due to the quality of coconut milk.
I would definitely buy a better quality coconut milk for whipping. You can stick to your favorite for other recipes or what have you but for whipping purposes, I’d try and grab a good quality if that’s something you’re not already getting. I think finding one without guar gum is your best option for making coconut whip.
All that said – I had a very hard time finding a coconut whip that would work for my Paleo Berry Parfait. During these unprecedented times with the ‘rona virus, some food & products are hard to find. I have been sticking with the Sprouts brand for coconut milk and I made it work for this recipe by adding an unsweetened jam! I use St. Dalfour Fruit Spread in Red Raspberry. I grab it at Sprouts but I’ve gotten at Vons, Whole Foods as well as online.

Obviously, we can enjoy this any time we’d like but if you’re looking for an all American treat, this simple recipe might be just what you’re looking for. I also love making my All American Thin Crust Brownie for these types of holidays! It’s a fun way to enjoy a dessert with festive vibes!
When you move on to see the ingredients in the recipe, I don’t have specifics for granola or even the jam for that matter. You can most certainly make your own granola, purchase one that you love or use a variety of nuts/seeds for crunch. I mention above what type of jam I use, but by all means …use what you love and or have on hand! This treat is sweetened with monk fruit but again, use whatever sweetener you like best!
Typically, I like the smaller berries like blueberry and raspberry but I think strawberries would be delicious too. Perhaps you can just cut them into four’s to make them fit better in your dessert glasses.
This recipe comes together rather quickly, so you can enjoy these individual Paleo Berry Parfaits right away! You can also make them ahead of time and sit them in your fridge til you’re ready for dessert. I hope you enjoy them as much as we do!
Paleo Berry Parfait
Notes
Putting the can of coconut milk into the refrigerator for at least 2 hours, helps solidify the coconut fat from the coconut water.
(Note) Don’t worry if this doesn’t work for you and doesn’t whip up completely. If after 5 minutes, you don’t have a “whipped” cream, move on to the next step.
Ingredients
- 1 can full fat coconut milk (solidified part only)*
- 2 tbsp favorite no sugar added raspberry jam
- 2 tsp monk fruit
- 2 cups paleo granola of choice
- 1/2 tsp pure vanilla extract
- 1/2 cup blueberries
- 1/2 cup raspberries
Instructions
- In a medium mixing bowl, whip up the coconut milk with a handheld mixer. Whip it until it’s creamy and peaks (see notes*).
- Add in the 2 tbsp’s jam and monk fruit. Continue mixing until these are combined.
- Grab (5) 5 oz. parfait glasses and put 2 tbsp’s paleo granola on the bottom of each parfait cup. Then dollop in 2 tbsp’s of the raspberry coconut whip, on top of the granola. If you have remaining whipped coconut, divide among each cup.
- Top the raspberry coconut whip with each of the berries, dividing amongst them evenly.
- Top off with a sprinkle more of the paleo granola …..and ENJOY!
