Phew. It’s been about a month since I have posted on here! There’s just been a whirlwind of events happening on my end and I simply had to take a break. It was giving me much anxiety about recipe testing/posting. So in order to put health first, I made the decision to take a wee break.
Now that we are settled into our new home, I am having fun in the kitchen again! It certainly doesn’t seem overwhelming when you’re doing it because you want to …..vs. because you feel obligated to, ya know? I bring you a treat. Paleo Blondie Bars with Chocolate. After we unpacked and got situated, a treat was in order!
Dessert First!
These Paleo Blondie Bars with Chocolate are very close to my Chocolate Chip Cookies. I tweaked it just a tad and spread it out into a small bar pan. I use the Bar Pan from Pampered Chef. It’s been around for years and I bet they have ‘new and improved’ pans. Either that or you can grab one at Home Goods etc. I’m sure you can even use a smaller cast iron skillet, if you wish.
Since I made these Bars without chocolate chips, I decided at the last minute to add some. I added some over top of the bar – put it back into the oven to melt the chips a bit. I guess my chocoholic ways always seem to get the best of me! The Blondie Bar is VERY good on its own – so no need to add chocolate if you don’t want to.
TIP of the day!
I will say this about about the chocolate layer. When stored in the refrigerator, the chocolate obviously hardens and seems to separate from the ‘cookie’. To alleviate this separation when biting into it, take a piece out of the fridge about 15+ minutes before you want to eat it. It helps take the chocolate to room temp. You can then bite into the Paleo Blondie Bar with the chocolate in tact. If you’re like my daughter and like to eat the cookie part first, then the chocolate …..well, you’re good to go to eat straight from the fridge!

Notes
When ready to eat, take your piece of Blondie Bar out of fridge (about 15-30 minutes) to allow the chocolate come to room temp so it doesn’t separate from the “cookie”.
Ingredients
- 1 cup almond butter
- 1 tbsp butter, melted/cooled
- 1 tsp vanilla
- 1/2 tsp baking soda
- Pinch of salt
- 1 scoop collagen (optional)
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 350°
- In a bowl, mix together almond butter, butter & vanilla. In a small bowl, whisk together the baking soda, salt and collagen. Add the dry ingredients to the wet and combine.
- Slightly grease a cookie bar pan or 8×8 baking dish – alternately, use parchment paper.
- Plop cookie dough into pan and spread using back of spoon. It may be a bit thick and/or sticky, so wetting the back of spoon will help.
- Bake at 350° for 15 minutes.
- Take out and carefully sprinkle on the cup of dark chocolate chips. Place back into oven for 5 minutes.
- Remove and use a rubber spatula to spread the soften chocolate over the top of the cookie bar. The cookie may break up a bit, so carefully spread to coat entire bar with chocolate.
- Let set and cool until chocolate has hardened. Cut into desired sized squares and enjoy!
