Have you ever gone to Costco hungry?? Well, that is exactly what happened to me the last time I visited Costco! I bought everything that remotely looked good to me. I rarely crave fruit but the berries were calling my name! As you know, you can’t just buy a small container. I thought I could eat my way through them but the next thing you know, I was trying to figure out how to use them up before they went bad. And that my friend, is how these Paleo Blueberry Bites came to fruition!
I was able to keep these Paleo Blueberry Bites relatively easy, as I just used a recipe I already have on my site. I used my Shortbread Cookie recipe so all I had to do with figure out how to make the blueberry topping. Honestly, as I checked out the shortbread recipe, I was tempted to make the Shortbread Cookies w/Raspberry Cream! I just didn’t have enough raspberries left. So, I was back on task with the Blueberry Bites. If you happen to be more of a raspberry lover, you might want to try these cookies!
As I said, I don’t always crave fruit and berries are my go-to, when I do want fruit. People assume since I eat “paleo” that I stay away from fruit because of the sugars but for me, that couldn’t be further from the truth. There was a time that I ate a banana a day, with almond butter. I slowly got out of that phase but that was my favorite snack for a a while. If I were steering clear of sugars from fruit, a banana wouldn’t have been an option for me. But I love bananas and equally love these Paleo Blueberry Bites!
I believe in moderation and I don’t believe in deprivation. If you want fruit, eat fruit! Fruit does add nutritional value so I don’t look at is as the same as eating a Snickers bar. We often eat more fruit during the summer months and that is when I may want a bit of pineapple too! For me paleo is all about eating real food. I know there are foods that the “paleo diet” omits but those to me, are more for inflammatory reasons. Fruit doesn’t fit that qualification in my book – but as always, you do you 🙂 I love this article by the Paleo Mom!

Paleo Blueberry Bites
Ingredients
- Crust:
- * 1 cup + 1 tbsp cup coconut flour
- * 1/2 cup melted ghee, cooled
- * 2 tbsp raw honey, melted/cooled
- * 1/4 tsp pure vanilla extract
- * Pinch of salt
- Blueberry Filling:
- * 2 cups blueberries
- * 1 tbsp honey or maple syrup
- * 1 tbsp tapioca powder
- * Pinch of salt
- Topping:
- * 1/4 cup almond flour
- * 1/4 cup finely chopped pecans
- * 2 tbsp coconut sugar
- * 2 tbsp butter or ghee
Instructions
- Preheat oven to 350°
- Line an 8×8 pan with parchment paper.
- In a small saucepan, add the blueberries, salt & honey. Set the flame to medium …..as blueberries warm, sprinkle on the tapioca powder and combine. Cook down the blueberries for about 8 minutes. Stir and press down on blueberries to create a thick texture.
- Once done, take off heat and let the blueberries cool.
- In a medium bowl, combine the crust ingredients. Mix thoroughly and pat down into the parchment lined pan. Put into oven and bake for 8-10 min (edges should be golden).
- While in oven, mix the topping ingredients in a small bowl using a fork to combine. The mixture should NOT be runny so don’t warm the ghee or butter (room temp is perfect).
- When crust is done and slightly cooled down, spread blueberry topping on top of crust, evenly. Top off with crumble!
- Put back into oven for 18-20 minutes. Let cool – slice into bite size pieces or larger bars!
