How do you do ‘work from home’ people do it? I have been off work since the end of June and thought I’d be putting out soooo much more content on my blog and build my Beautycounter business even more-so than I’m doing now and yet, it’s still slow and steady work as it was while working full-time! These Paleo Chocolate Chip Banana Muffins took me about 3 weeks to get right. I honestly thought that since I had “the time”, I’d be able to perfect recipes within 24-48 hours. Not so much.
I don’t know, maybe because I’m technically on “vacation” from work, I am really trying to balance the work with the summer fun. I have my daughter & granddaughter living with us and since they’ve lived in North Carolina for a couple of years, I’m so enjoying the time with them and it’s been so fun being in their lives on a daily basis. That said, it’s really not what I had envisioned for my summer when I made the decision to not work summer school. I had every intention of dedicating ‘full time’ hours of my day, toward my home based business(es).
HELP!
So what’s the trick? I mean, since I’ve been blogging and working Beautycounter I’ve worked in the wee hours of the morning or evening ….and weekends because that’s all the time I had to work those businesses but now with having my days free, I still tend to work within those time frames. I guess it’s really about dedicating the time and sticking to it – just like if I were to be going into to a brick & mortar, correct? I just need to make that commitment and treat it like my “job”, right?? No, really — I’m asking. Please give me all the tips you got!
Part of me knows that my kids living with me won’t be forever so I need to enjoy this moment and yet the other part of me knows that they’ll still be here, even when I have to set some time aside to work. But isn’t creating your own schedule and being flexible part of the perks of owning a home based business? Again, I think that my time is limited with knowing that I’m going back to work in September and I really need to balance the fun of being ‘off work’ and working from home. Do I dedicate certain days to work or certain hours in each day? I’m sure it’s on an individual basis but really – I would love any advice that you home based business owners might have!
Back to the Paleo Chocolate Chip Banana Muffins
Alrighty – let’s get to these muffins! I played around with different flours and and even asked some of you who watch my ‘stories’ on Instagram, what you might like to see in the muffins and with overwhelming response, chocolate chips were the addition of choice! And a good one, I might add!
My daughter is my most loyal critic – and yes, I’m serious when I say critic. She doesn’t hold anything back when it comes to what she likes and dislikes. The first few batches of these Paleo Chocolate Chip Banana Muffins were ‘ok’, in her opinion. As I saw her pulling the muffin liner off these current muffins, I stared at her reaction. She kept munching away on it ….not even realizing that I was watching her. I said, “Well….?” And she said, “Now these are good!”. Whew. I could stop recipe testing/tweaking and run with it.
As mentioned earlier, I thought I’d be getting these Paleo Chocolate Chip Banana Muffins whipped up & mastered within a couple of days but it took a few weeks due to my running off with my girls more often than not. That’s ok, I’ll get to these recipes in due time ….as I did here but these memories I’m making with my girls mean the world to me.
Enjoy these muffins warmed or chilled ….with a cup of coffee or milk! They are good either and all ways – trust me, I’ve had them both ways and they are delicious either way!

Paleo Chocolate Chip Banana Muffins
1 cup blanched almond flour
1 medium banana, mashed (about 1/4 cup)
1/4 cup applesauce
1 egg
1 tsp baking powder
1/4 tsp salt
2 tbsp honey
3 tbsp butter or ghee, melted/cooled
1 tsp pure vanilla extract
1/2 tsp cinnamon
1/4 cup dark chocolate chips/chopped bar
1/4 cup walnuts, roughly chopped

-Preheat oven to 350 degrees.
1.In a bowl, whisk together the flour, baking powder, salt and cinnamon.
2.In medium bowl, whisk egg and add in the applesauce, masked banana, honey, vanilla and cooled/melted ghee or butter. Stir to combine.
3.Incorporate the wet ingredients with the dry using a whisk. Toss in the chocolate chips and walnuts and stir in with spoon.
4.Line a muffin pan with parchment muffin/cupcake liners and fill the liners with batter about 3/4 full.
5.Bake 18 minutes at 350 degrees.
