Did you ever walk in the door from school and smell the wonders of baked peanut butter cookies? I sure did! My mom always had homemade cookies on hand and peanut butter was my favorite! These Paleo Chocolate Chip Peanut Butter Cookies aren’t exactly the same — I’m not gonna lie! BUT they do give you all the feels for a cookie that has been missed for many, many years!
These cookies are made with sunflower butter and so if you’re looking to steer clear of nuts, these are for you! I’m not quite sure what makes sunflower bake up to taste a bit like peanut butter, but it surely does have that vibe! I used to be a ‘scoop and spoon peanut butter into my mouth’ kind of girl but realized after I starting eating a paleo diet that peanut butter was still giving me some tummy issues. I had no idea it was considered a legume! Once I swapped the peanuts for almonds, I no longer had a bloated and/or gassy stomach. While I know that sunflower butter isn’t a complete copy cat of peanut butter, I do like the hint of peanut butter that I get from this cookie – and I know there will be no “issues” later!
I was actually attempting to make my Chocolate Chip Almond Butter Cookies when I realized I was out of almond butter so I subbed the sunflower butter in place and was pleasantly surprised that these cookies were reminiscent of a peanut butter cookie! That’s how these Paleo Chocolate Chip Peanut Butter Cookies were born!
The holidays are approaching and while I realize it’s only the beginning of October, you and I both know that we’ll be in the heart of all the holiday spirit in no time! Baking cookies and treats usually goes hand in hand with the holiday season so be sure to keep these Paleo Chocolate Chip Peanut Butter Cookies in mind when baking. They are perfect to have at gatherings or to hand out plated cookies for those who may not be able to eat nuts. Kids love them too! They are very kid-friendly and can even be taken to school’s where ‘no peanut butter’ rules might be implemented.
Have fun making these Paleo Chocolate Chip Peanut Butter Cookies. Grab your kiddos and make ’em together on a Sunday afternoon. Then sit back with a cup of coffee (milk for the kids) and enjoy one …..or 2 (or 3 or 4 — kidding …..save some for the week!). And please ~ let me know what y’all think!
- 1 cup sunflower butter
- 1 egg
- 1/2 cup coconut sugar
- 1 tbsp tapioca flour
- 1 tsp pure vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 cup dark chocolate chips (I use Enjoy Life)
- Preheat oven to 350 degrees.
- In a stand mixer (or handheld mixer), combine sunflower butter, egg, coconut sugar and vanilla.
- Add in tapioca flour, baking soda and salt and mix well - scraping sides if needed.
- Mix in the chocolate chips by hand.
- Using a small scooper*, scoop cookie dough on parchment lined cookie sheet and gently flatten a little with back of slightly wet spoon to prevent the spoon from sticking.
- Bake for 10-12 minutes.
- You may yield less cookies if using a bigger scooper. I like the small scooper* (about 1+ tbsp) -- portion control (wink-wink)
