Are you a cookie dunker? I sure am! I prefer to dunk in coffee but milk will do from time to time. Sometimes I’ll even grab a little cookie with my morning coffee (shhhhh…don’t tell anyone!). Enter Paleo Coffee Cookies = the best ‘morning cookie’ there is.
The warmth of coffee and coffee cake is my absolute favorite but when I whipped up these cookies, I had all the coffee cake feels! These Paleo Coffee Cookies are the perfect accompaniment to a cup o’joe. The back end flavor of cinnamon is the perfect touch!
Speaking of Cinnamon
While the Paleo Coffee Cookies are simple and subtle, these Paleo Snickerdoodle Balls are a little more bold in flavor and are perfect around Christmas time! And talk about a cookie fit for dunking into coffee? It’ll give your coffee a hint of cinnamon flavor in the end. Whether or not you’re paleo – grain free or even gluten free, you’ll love these! I bring them along to get togethers around the holiday season and they go fast!
Baking Season
Tis the season, right? If you’re reading this around the time it was published, it’s definitely baking season! Pies are in the oven for Thanksgiving and soon after, many of us are in the kitchen baking cookies. I used to spend many hours making cookies with my kids – cutting out shapes and putting frosting on them. Nowadays? I keep it more simple. Chocolate chip cookies, some sort of cinnamon cookie and a mint chocolate cookie are the go-tos. (But – I will definitely be making these Paleo Coffee Cookies …for sure!)
My mom still gets in her kitchen at the beginning of December and bakes her little heart out! She freezes them and pulls them out to plate for all of her neighbors. I have never been ‘that girl’. I think I may have given out plates of cookies with neighbors one year. That’s it. I know – pretty shameful but some people have that gift and I surely don’t. I love to bake cookies this time of year but I missed out on the ‘bake and plate and share’ gene! *sigh*
Actually, speaking of cookies – I am going to head into my kitchen right now and make some of my Chocolate Chip Almond Butter Cookies! We are all wanting a little bite of something sweet at the moment and these cookies are so easy to whip up! And so are the Paleo Coffee Cookies …..but, we want CHOCOLATE 🙂

Paleo Coffee Cookies
Ingredients
- 1 cup +2 tbsp almond flour
- 1/4 cup coconut sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 2 tbsp melted/cooled coconut oil
- 2 tbsp cashew butter
- 1 egg
- 2 tbsp chopped roasted, salted almonds
Instructions
- Preheat oven to 350°
- In medium sized bowl, combine the almond flour, coconut sugar, baking soda and cinnamon.
- In another bowl, whisk the egg and add in the the coconut oil & cashew butter and whisk to incorporate. Add the wet mixture to the dry and combine. Mix in the almonds.
- Using a small scooper, drop dollops onto cookie sheet. I get about 24 onto the sheet, with a little left for a smaller batch.
- Bake for 8-10 minutes
- Enjoy with a hot cup of coffee or cold glass of milk! Happy dunking!
