Friends. I’ve been sitting here typing up a post about this Egg Roll in a Bowl and a bit about Tokyo and just lost it all! Ya, so about an hour of typing and posting photo’s is gone – completely gone. Erg.
BUT there are worst things, right?! I’ll just laugh and move on. That being said, I’ll keep this super short and share more about Tokyo in its own post. That makes more sense anyway.
So – this Paleo Egg Roll in a Bowl is not only simple to make BUT all made in one pan! You’ve got simplicity and quick clean up! How fun is that? I’ll admit, I haven’t had an egg roll in a very long time but I’m thinking this is reminiscent and super healthy so it’ll work no matter what.
This recipe calls for ground beef but feel free to use ground pork or chicken. I am certain it will be equally delicious! You can make it vegetarian by omitting the protein all together and sub the beef broth for vegetable broth. Or you can make this Paleo Chow Mein if you’re a vegetarian just looking for a side dish.
It calls for red pepper flakes and my first stab at this recipe, I used wayyy too many red pepper flakes so I adjusted the measurement but if you like heat & spice, by all means ….add more! This Paleo Egg Roll in a Bowl is perfect for a busy weekday night so if you’re looking for a good/healthy meal, that is quick, easy and good, this one’s for you!
Paleo Egg Roll in a Bowl
Ingredients
- 1- 1/2lb ground beef
- 1/2 cup diced onion
- 1/3 cup beef broth
- 2 16oz packages of coleslaw
- 2 tbsp toasted sesame oil
- 2 tbsp coconut aminos
- 2 tsp ground ginger
- 2 tsp garlic powder
- 1 tsp red pepper flakes (add more if you like heat)
- 1 tsp salt
- 1/2 tsp pepper
- Green onions, sliced
- Sesame seeds
Instructions
- In a large pan, brown the ground beef, breaking up as needed.
- Add diced onions to pan and stir about for 3-5 minutes.
- Add beef broth, toasted sesame oil, ginger, garlic powder, salt and pepper. Stir to combine.
- Toss in the 2 packages of prepared coleslaw. It’ll take a couple of minutes to cook down, so gently toss about until somewhat wilted.
- Stir in the coconut aminos and red pepper flakes – continue stirring until cabbage is wilted.
- Top off with sliced green onions and/or sesame seeds.
