Raise your hands if you have heard of Hummingbird Cake? I will keep my hand down. Over 1/2 century old and have never heard of this delicious little treat! I had to make a paleo version of what my hubby described and these Paleo Hummingbird Muffins w/Cream “Cheese” Frosting came to fruition!
My husbands coworker celebrated a birthday and someone brought in a Hummingbird Cake. After much convincing, he finally took a bite and was in awe. He said he couldn’t even describe it because all the flavors melded together so well. When the coworkers told him what was in it …he almost didn’t believe them because again, nothing really stuck out. It was just a great melding of flavors!
Make It Paleo
So he comes home and asks me if I’d heard of it. And ‘nope’ was my reply. He began to tell me what was in it and I nearly gagged. I am just not a fan of fruit in a cake. BUT ….he now convinced me to try and make a paleo version. He described what was in it. I then dabbled with a few of my muffins recipes, tweaking ‘this and that’ to create a Paleo Hummingbird Muffin w/Cream “Cheese” Frosting. It’s soooo hard to do when you have no idea what flavors you’re looking for.
After a tweak here and there ….adding this in and taking this out …..I was told that the batter resembled the taste of a Hummingbird cake. The batter was good to me! But again, I had no idea what I was looking for.
Fast forward 22ish minutes and Paleo Hummingbird Muffins were out of the oven. I couldn’t wait for them to cool to see what Peter thought! In the meantime, I whipped up a cream “cheese” frosting to go on top. And we just waited. The frosting is dairy free as I use Kite Hill Cream Spread but I’m sure you can find a traditional cream cheese frosting if you prefer.
More Muffins
While you wait to hear the verdict, I’ll share these muffins with you! I realize I said that I’m not a fan of fruit in a muffin BUT these are an exception and soooo good! If you like muffins, berries and lemon – then here you go! These Lemon-Raspberry Muffins are for YOU!
Ok. I’m sure by now you realize that the Paleo Hummingbird Muffins w/Cream “Cheese” Frosting were a hit because otherwise, why would I be posting them??! He loves them! While I didn’t think I would like pineapple in my muffin, he was right ….there’s no distinct flavor detected. The flavors just harmonize so beautifully and it’s just a delicious muffin.
Plain and simple. A delicious muffin. So, if you’re into delicious muffins, go make these! Now I can’t tell you if they taste like Hummingbird Cake or not but I can tell you, that they are good! Give them a try and let me know what you think!
Ingredients
- 2 cups almond flour
- 1/4 cup coconut sugar
- 1 tbsp cinnamon
- 1 tsp baking soda
- 1 tsp salt
- 1/2 cup chopped pecans
- 2 ripe bananas (about 1 cup)
- 3/4 cup crushed pineapple
- 2 eggs
- 2 tsp pure vanilla extract
- Cream “Cheese” Frosting:
- 1/2 tub Kite Hill Cream Cheese Spread
- 2 tbsp ghee
- 2 tbsp powdered stevia (or honey)
- 2 tsp pure vanilla extract
Instructions
- Preheat oven to 350°
- Line a muffin tin with liners (I like parchment liners)
- In a bowl, mash bananas well. Add crushed pineapple, pure vanilla extract. Whisk eggs and incorporate them into these ingredients.
- On another bowl, whisk almond flour, coconut sugar, cinnamon & baking soda together.
- Add your wet ingredients to the dry ingredients and incorporate. Stir in chopped pecans.
- Using a large scooper, scoop out batter into each muffin tin, filling about 3/4 up the liner. If there’s a bit extra batter, disperse evenly.
- Bake at 350° for 22-24 minutes.
- While muffins are cooking, mix all cream cheese frosting ingredients together, with an electric handheld mixer.
- Let muffins cool on baking sheet. Don’t get too anxious – frost when muffins are completely cooled.
- Enjoy!
