Are you a fan of macadamia nuts? I sure am ….and when macadamia’s are on hand, you make Paleo Macadamia Nut Cookies! No lie – I’m getting right up from this computer and making another batch as soon as I type this up!
While macadamia nut cookies are amazing on their own, I did toss in a handful of dark chocolate chips because as you all know, I’m a chocoholic! Most macadamia nut cookies are made with white chocolate chips but I’m not a fan. If you are, by all means …switch out the dark for while! I’m a dark chocolate girl & have been ever since I was little one. I was probably the one who went through my trick-or-treat bag, digging for those Special Dark chocolates! (truth be told, even those area a bit too sweet for me now).
While I love most nuts out there, macadamia nuts are high on my ‘favorites’ list. These offer a buttery, almost sweet flavor all the while providing some healthy benefits. They can lower risks for heart disease. They may help prevent cancer and protect our brain. Also, macadamias may improve gut health. And they are definitely a great healthy fat to take in. Like with any other nut, it can pack on quite a lot of calories so we all need to remember that a small handful will do ya good. Make a it a few handfuls (or worse, the whole bag!) and you just might find yourself stalling in weight loss or even putting on a few extra pounds. Moderation is key!
It’s More Than Just A Nut
I have a delicious Mac’n’Zucchini recipe that you have to try! I realize macadamia nuts aren’t the least expensive nut out there but go ahead and splurge from time to time and give this recipe a try. This dish is always eaten up quickly and highly praised! It’s addicting – so be ready!
Back to the Paleo Macadamia Nut Cookies! Feel free to omit the chocolate. Obviously you can add in the classic white chocolate chip or perhaps just add in more macadamia nuts! Always try and make it your own. I just so happen to love that little bit’o chocolate so they are my go-to! My mom always added in some chopped walnuts to her chocolate chip cookies, so basically that’s what I’ve done here – but using macadamia nuts instead.

Ingredients
- 1 cup cashew butter
- 1 egg
- 1 tbsp ghee or melted/cooled butter
- 1/2 cup coconut sugar
- 1 tbsp tapioca flour
- 1 tsp pure vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 cup roughly chopped macadamia nuts
- 1/4 cup Enjoy Life Dark Chocolate Chips
Instructions
- Preheat oven to 350 degrees.
- In a stand mixer (or handheld mixer), combine cashew butter, egg, coconut sugar and vanilla.
- Add in tapioca flour, baking soda and salt and mix well – scraping sides if needed.
- Mix in the macadamia nuts & chocolate chips by hand.
- Place cookie dough on parchment lined cookie sheet and gently flatten a little with back of slightly wet spoon to prevent the spoon from sticking.
- Bake for 10-12 minutes.
