One of my favorite things to eat in the summer months, is a good macaroni salad! Did I ever think that a macaroni salad could be paleo-fied?? Nope. Not really! But alas – I found Jovial Grain Free Pasta and was able to make an amazing Paleo Macaroni Salad!
Pasta Wannabes
So, as I ventured into the grain free world, there weren’t many (good) options for pasta-like food. I did try many brands that “tried” to resemble pasta ….but not.that.good, IMO. And then of course, we all opted for spaghetti squash, zoodles and even shirataki noodles. Great substitutions for me because I love those foods but for some, it fell short of a good, chewy pasta!
I know there are a lot of gluten free options as well. In fact, Jovial has not only grain free but offer gluten free too! There is also pasta-like products made with chickpeas and yes, I do absolutely love those! BUT …sadly, my tummy wasn’t a huge fan of eating chickpea too often. I did try a few ‘gluten free’ brands and to be honest, some were very good but again, I didn’t always feel my best after eating those. I tend to feel a-o-k when I eat a grain free product. I’ll just say – I have no issues at all with this Paleo Macaroni Salad!
Another option for a pasta-like dish, is Heart of Palm. I was so surprised to see this at the store one day! I feel good eating it so if you’re like me and need to stay away from the grains right now – this might be for you. Dare I say, it has a definite Heart of Palm flavor ….so unlike shirataki noodles, where they basically take on the flavor of the recipe, HoP flavor is detected. If you like the flavor though, you’ll be happy with this pasta substitution! Here’s a Paleo Lasagne recipe you might want to try using Palmini Pasta!
Summer Loving and BBQ’s
….bring on the Paleo Macaroni Salad!
While I love bundling up with boots, scarves and bulky sweaters, summer is definitely my favorite season! I’m ready! The first sign of summer and I’m putting away all my winter clothing (which isn’t much considering I live in Southern California). Along with grabbing the tanks and sundresses …I am ready for BBQ’s and this summer will look much different than 2020! I’m already planning, so we can visit with many friends and family that we missed seeing all of 2020.
What’s your go-to for BBQ’s and potlucks? I truly believe this Paleo Macaroni Salad should be on the table – whether you’re hosting or bringing it along. I even had non-paleo peeps comment on how good it was. If you’re reading this when it was written ….Memorial Day is just a few days away and this Macaroni Salad will be perfect for your get together. This dish has already been requested for our BBQ at my sister in laws house 🙂

Paleo Macaroni Salad
Notes
I suggest at least an hour in the fridge – but overnight works best as all the flavors meld together! If I make it the day before, I just add a bit more mayo before serving 🙂
Ingredients
- 1 box Jovial grain free pasta
- 3/4 cup mayonnaise
- 1/2 cup diced celery
- 1/3 cup diced red onions
- 3 hard boiled eggs, chopped
- 2 tbsp mustard
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp pepper
- Green onions and/or parsley for garnish
Instructions
- Prepare the pasta according to package.
- Dice veggies & eggs.
- Drain pasta and rinse with cold water.
- Add pasta to a medium size bowl, adding in veggies, mayo, mustard and seasonings. Mix it all up!
- Place in fridge for at least an hour to chill. Enjoy with your favorite BBQ meats!

Sorry just saw this now Will be making this soon can i use vegan mayo and skip the eggs as am a vegan can i skip celery as am not a big fan of it can i use other pasta as i dont have jovial pasta in Singapore perfect for my after office meals will dm you if i make this and let you know how it goes Thanks Ramya

You can most certainly skip the celery and sub out the pasta for another 🙂
