Let the baking festivities begin! Thanksgiving is wrapped up so now we can now get all things Christmas started! These Paleo Pecan Bars should be on your baking to-do list, if I do say-so myself.
I’m going to take a minute and address Christmas. While some of you reading this may not celebrate Christmas, I do. I love the feeling of the whole holiday season and whether you celebrate Christmas or not, I wish you lots of laughter and cheer throughout the end of this year. I want to be sensitive to those who may not participate in the holiday I personally celebrate but let’s be clear – my posts and recipes will in fact have a Christmas vibe because of my beliefs and the joy I feel around this time of year. This does not negate the holiday you may celebrate. I respect each and every one of you, no matter what holiday you do or don’t take part in! I just wanted to throw that out there because I know things get a little “tender” around using the word ‘Christmas’ vs. ‘Holiday’ etc and so on. For me, I usually use the word Christmas because it is in fact the holiday I celebrate — likewise, I would use the word ‘Hanukah’ if that were the holiday I participated in. It is what it is and it in no way reflects how I feel about any other day that someone recognizes or celebrates.
All that said, I wanted to share these Paleo Pecan Bars for any and all holidays! While these bars would be great to have around at a family get together, you don’t need a holiday to whip these up. We had them around for a while as I was testing out the recipe and truth be told, there was no need for a special occasion to pop one of these Paleo Pecan Bars into your mouth!
While on the subject of popping a paleo treat into your mouth, these Paleo Mini Desserts are what you might want to keep in mind for your holiday get together. These are desserts using the same crust base but by switching up the topping, you’ve got 3 desserts covered! Honestly, I haven’t made these in about a year but they were definite crowd pleasers & it’s always nice to have single-serve treats around because portion control isn’t always the best during the holiday season ……am I right?
Alrighty – I’m actually getting the urge to jump up and make one or all of these treats I’m chatting about! Particularly, these Paleo Pecan Bars because not only are the easy to make, they are so good! I think those only person that didn’t like them was a friend who doesn’t like pecans BUT I will say, she ate the bar in its entirety as she said, “Well, for not liking pecans, this isn’t actually that bad.” Sooooo ….there ya go!
I am personally a huge pecan lover so if you’re like me, there’s no reason you shouldn’t try these Paleo Pecan Bars. I think you’ll be pleased and if you don’t want to keep munching on them all by yourself, they make a great ‘take to work’ treat for all of your co-workers to enjoy! Either way my friends, it’s a recipe worth trying!! (recipe below as my recipe card is playing tricks and being finicky!)
Paleo Pecan Bars
Crust:
1 3/4 blanched almond flour
1/4 cup coconut flour
1 egg
2 tbsp coconut oil (cold or room temp, not warmed)
1/2 tbsp pure maple syrup
Pinch of salt
Pecan topping:
2 cups chopped pecans (8 oz bag)
1/2 stick butter
1/2 cup pure maple syrup
1 egg
1/2 tbsp tapioca powder
Preheat oven to 350 degrees.
Whisk the crust flours together with salt. Add in a whisked egg & pure maple syrup. Incorporate the coconut oil by using hands. Press into a ball.
In a 6×4 baking dish lined with parchment paper, drop the dough into dish and press to all edges with hands/fingers.
Bake at 350 degrees for 10 minutes.
While in oven, melt the butter and add the rest of topping ingredients to the melted butter. This can be on stove top or melted in bowl in a microwave.
Let crust cool for 15 minutes once out of the oven.
Pour pecan mixture over crust and bake another 20 minutes. Let cool on rack for 15 minutes – remove bars from dish by gently removing parchment paper from baking dish. Continue to let Pecan Bars cool on rack.
Slice into your preferred sized bars when completely cooled.
