Let’s get baking! So many of us are spending time in the kitchen these days. My Paleo Chocolate Chip Cookies have been made so much lately. I decided I needed to switch it up and I had pecans on hand – so these Paleo Pecan Cookies came to life.
Cookies are good any time but it’s been a bit cold these days ….so having one of these cookies with a hot cup of coffee has been amaaazing! Adding chocolate chips to these Paleo Pecan Cookies would be good too. I just might do that next time.
There are a handful of cookie recipes that I have here. I’ll go ahead and link to some of them here, so you can just click and go, if you’d like. My all time favorite ones to make are the Chocolate Chip Almond Butter Cookies – however, I do switch up the “butters” from time to time and use cashew butter. I love them either way! And for you Cookie Dough fans …I’ve got this recipe and it’s gooooood!

A Cookie, Is a Cookie
As I’m sure you have noticed – I like my treats. While I consider them a “better” cookie to have on hand, they are still treats. So get in your kitchen and have fun baking away. Just remember….if you have health goals, take that into consideration when you reach your hand into that cookie jar 🙂

Paleo Pecan Cookies
Ingredients
- 1 1/2 cups + 2 tbsp almond flour
- 1/2 cup + 2 tbsp coconut sugar
- 1 tbsp tapioca flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 8 tbsp melted/cooled butter
- 1 egg + 1 egg yolk
- 1 tsp pure vanilla
- 1/2 cup roughly chopped pecans
- A handful of pecans to “top off” if desired
Instructions
- Preheat oven to 350°
- In a bowl, whisk together the dry ingredients.
- In another bowl, whisk the egg and egg yolk, then add in the cooled melted butter & vanilla.
- Pour the wet ingredients into the dry ingredient bowl and incorporate.
- On a parchment lined baking sheet, use a small scooper to dollop dough onto the sheet. These cookies do spread a bit ….so make sure to leave a couple a couple of inches between each cookie. Place a couple/few pieces of pecans on top of the dough, if desired.
- Bake at 350° for 10 – 12 minutes.
- Set on cooling rack to “set up” and enjoy warm or cooled off with a cold cup of milk or hot cup of coffee!
