Pumpkin pie is one of my favorite pies around the holiday season. I’m sure people make it all year long but for me, it’s only an October, November and December pie! I made these Paleo Pumpkin Pie Bars because I wanted the pie taste but the ease of picking one up and munching on it! And here ya go!
Initially, these bars were so thick as I really used too much “filling”. It took over an hour 1/2 to bake ….and the crust became burnt. That’s not good. So, I halved the recipe and while it still took about an hour, it was delicious & the family has devoured both test batches!!
Finger Foods Are The Best Foods
These Paleo Pumpkin Pie Bars are perfect to take along to Thanksgiving because they are basically ‘grab-n-go’. No need to slice and since they are squared, you get many more servings than a typical pie would offer. It’s 2020, so perhaps people aren’t getting together as they normally would, sadly. But these Paleo Pumpkin Pie Bars would be great to take to work parties and other get togethers.
Speaking of 2020, I’m actually not even sure what my Thanksgiving will look like this year. We have already been told by our ‘usual hostess’ that she won’t be hosting ….so now I’ve got to come up with a Plan B. That brings me to Black Friday! We usually have a great tradition of all meeting up for Black Friday shopping and lunch. While the malls are open, I’m not sure how many people will feel comfortable keeping the tradition going. There is outdoor seating at the restaurant we usually go to, so maybe …..just maybe, we can get some of the ‘usuals’ to still come out. We’ll see.
I would like to try and keep the holidays as normal as possible. I rarely like time to move along quickly but I’m itching for this year to be over! I really hope 2021 has a better vibe – I’m sure we all do! In trying to keep it as normal as possible, I will be having my granddaughter over to bake, decorate, make Halloween and Christmas gingerbread houses and hopefully, still drive down to see all the Christmas lights in a nearby neighborhood that goes above and beyond!
Tis the Season to Start Baking
I’m ready to start baking some goodies to make the house smell warm and fuzzy! These Paleo Pecan Bars are just the thing to do that! They are finger lickin’ good and a huge crowd pleaser! If you’re like me and like dessert in bar form, you will definitely want to give these a try!

Paleo Pumpkin Pie Bars
Ingredients
- Crust:
- 2 cups almond flour
- 8 oz butter (room temp!)
- 2 tbsp coconut sugar
- Pumpkin Layer:
- 1 cup pumpkin
- 2 large eggs
- 1/2 cup coconut sugar
- 1/2 can coconut cream (shake can!)
- 2 oz. cream cheese (I use Kite Hill – 1/4 of tub)
- 1 tbsp almond flour
- 1 tbsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/2 tsp pure vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°
- In a small bowl, combine crust ingredients and pat into a parchment lined 5×7 baking dish.
- Bake for 20 min at 350° (it’s ok if it’s not golden!)
- In a larger bowl, use a hand mixer to whip up eggs first, then add in other ingredients for the pumpkin pie later and incorporate with hand mixer.
- Once crust is done, let it set for 10 minutes on cooling rack. Pour pumpkin pie filling onto crust and smooth over, making sure it’s even layered.
- Bake at 350° for 60 minutes. Top should be set and not too jiggly.
- Cool completely before removing parchment from baking dish. I prefer to refrigerate for a few hours after cooling. Cut into desired square sizes.
- Keep cut bars stored in refrigerator.
- When ready to eat, dollop with your favorite whipped topping and a sprinkle of cinnamon!
